Instructions

  • Prepare the pan
  • Line an 8×8-inch pan with parchment paper, leaving overhang for easy removal.
  • Melt the base
  • In a saucepan over low heat, combine white chocolate chips, sweetened condensed milk, butter, and salt. Stir constantly until smooth and fully melted.
  • Add papaya & vanilla
  • Stir in papaya purée and vanilla bean seeds (or vanilla paste). Mix until fully incorporated and glossy.
  • Pour & smooth
  • Pour the fudge into the prepared pan and smooth the top with a spatula.
  • Chill
  • Refrigerate for 2–3 hours, or until fully set.
  • Slice & serve
  • Lift out, slice into squares, and garnish if desired.

Notes

  • Use fully ripe papaya for the best flavor and natural sweetness. Unripe papaya will taste bland and slightly bitter.
  • The papaya purée should be very smooth. Blend thoroughly and strain if needed to avoid fibers in the fudge.
  • If your papaya is watery, gently simmer the purée for 3–5 minutes to thicken before adding it to the fudge base.
