  • 1 cup fresh or frozen strawberries hulled
  • ½ cup granulated sugar
  • ½ cup water
  • 1 tsp lemon juice

Strawberry Bubblegum Soda

  • ¾ cup homemade strawberry syrup from above
  • 1–1½ cups plain sparkling water or club soda chilled
  • ¼–½ tsp bubblegum extract start very small

Creamy Finish (Optional)

  • ¼ cup half-and-half heavy cream, or vanilla creamer

Optional Garnishes

  • Whipped cream
  • Pink sprinkles or sanding sugar
  • Fresh strawberry slices
  • Bubblegum balls or candy decor only

Instructions

Make the homemade strawberry syrup

  • In a small saucepan, combine strawberries, sugar, and water. Bring to a gentle simmer over medium heat and cook 8–10 minutes, stirring occasionally, until strawberries break down and syrup thickens slightly.

Strain & cool

  • Remove from heat. Strain through a fine mesh sieve, pressing on the solids. Stir in lemon juice and let cool completely.

Prepare the soda base

  • In a small pitcher, stir together ¾ cup cooled strawberry syrup and ¼ tsp bubblegum extract. Taste and add more extract drop by drop if desired.

Fill the glasses

  • Fill two tall glasses with ice.

Assemble the soda

  • Divide the strawberry-bubblegum mixture between the glasses.
  • Add fizz
  • Slowly top with sparkling water to taste.

Optional cream swirl

  • Pour cream or creamer slowly over the back of a spoon for a pastel swirl effect.

Garnish & serve

  • Add whipped cream, sprinkles, or strawberries if using. Serve immediately while fizzy.

Notes

  • Bubblegum extract is very strong: Start with a few drops and increase gradually to avoid overpowering the strawberry flavor.
  • Strain well: Press the strawberry solids firmly when straining to get the brightest color and most flavor.
  • Sweetness control: Adjust sweetness by adding more sparkling water or a splash of plain soda.
  • Chill everything: Cold syrup and soda help keep the drink fizzy and refreshing.
  • Creamy swirl tip: Pour cream slowly over the back of a spoon for a soft pastel swirl.
  • Dairy-free option: Coconut milk or oat creamer pair nicely with the fruity, candy-like flavor.
  • Make ahead: Homemade strawberry syrup can be refrigerated for up to 1 week in an airtight container.
  • Party serving: Multiply the syrup recipe and set up a DIY soda bar for easy entertaining.

What does bubblegum soda actually taste like?
It has a sweet, nostalgic candy flavor with hints of strawberry. The bubblegum extract adds aroma and sweetness rather than a sharp or artificial taste when used lightly.

Can I skip the bubblegum extract and still make this?
Yes. Without the extract, you’ll have a delicious homemade strawberry soda. The bubblegum flavor is optional and mainly adds the nostalgic twist.

Is this drink suitable for kids?
Absolutely. It’s non-alcoholic and very kid-friendly, making it great for birthday parties and special treats.

Can I make a large batch for a party?
Yes. You can multiply the strawberry syrup recipe easily. Assemble each soda individually right before serving so the fizz stays fresh.

What’s the best sparkling water to use?
Plain sparkling water or club soda works best. Flavored sparkling waters can compete with the bubblegum and strawberry flavors.

Can I turn this into a float?
Definitely. Add a scoop of vanilla ice cream instead of cream for a strawberry bubblegum soda float.
