Instructions
Make the homemade strawberry syrup
In a small saucepan, combine strawberries, sugar, and water. Bring to a gentle simmer over medium heat and cook 8–10 minutes, stirring occasionally, until strawberries break down and syrup thickens slightly.
Strain & cool
Remove from heat. Strain through a fine mesh sieve, pressing on the solids. Stir in lemon juice and let cool completely.
Prepare the soda base
In a small pitcher, stir together ¾ cup cooled strawberry syrup and ¼ tsp bubblegum extract. Taste and add more extract drop by drop if desired.
Fill the glasses
Fill two tall glasses with ice.
Assemble the soda
Divide the strawberry-bubblegum mixture between the glasses.
Add fizz
Slowly top with sparkling water to taste.
Optional cream swirl
Pour cream or creamer slowly over the back of a spoon for a pastel swirl effect.
