Ingredients

Homemade Strawberry Soda Base

  • 1 cup fresh or frozen strawberries hulled
  • ½ cup granulated sugar
  • ½ cup water
  • 1 tsp lemon juice

Strawberry Bubblegum Soda

  • ¾ cup homemade strawberry syrup from above
  • 1–1½ cups plain sparkling water or club soda chilled
  • ¼–½ tsp bubblegum extract start very small
  • Ice

Creamy Finish (Optional)

  • ¼ cup half-and-half heavy cream, or vanilla creamer

Optional Garnishes

  • Whipped cream
  • Pink sprinkles or sanding sugar
  • Fresh strawberry slices
  • Bubblegum balls or candy decor only

Instructions

Make the homemade strawberry syrup

  • In a small saucepan, combine strawberries, sugar, and water. Bring to a gentle simmer over medium heat and cook 8–10 minutes, stirring occasionally, until strawberries break down and syrup thickens slightly.

Strain & cool

  • Remove from heat. Strain through a fine mesh sieve, pressing on the solids. Stir in lemon juice and let cool completely.

Prepare the soda base

  • In a small pitcher, stir together ¾ cup cooled strawberry syrup and ¼ tsp bubblegum extract. Taste and add more extract drop by drop if desired.

Fill the glasses

  • Fill two tall glasses with ice.

Assemble the soda

  • Divide the strawberry-bubblegum mixture between the glasses.
  • Add fizz
  • Slowly top with sparkling water to taste.

Optional cream swirl

  • Pour cream or creamer slowly over the back of a spoon for a pastel swirl effect.

Garnish & serve

  • Add whipped cream, sprinkles, or strawberries if using. Serve immediately while fizzy.

Notes

  • Bubblegum extract is very strong: Start with a few drops and increase gradually to avoid overpowering the strawberry flavor.
  • Strain well: Press the strawberry solids firmly when straining to get the brightest color and most flavor.
  • Sweetness control: Adjust sweetness by adding more sparkling water or a splash of plain soda.
  • Chill everything: Cold syrup and soda help keep the drink fizzy and refreshing.
