Equipment

  • Large skillet or sauté pan
  • Cutting board
  • Sharp knife
  • measuring cups
  • Measuring spoons
  • garlic press (optional)
  • Tongs or spatula
  • small bowl (for sauce mixing)
  • Citrus juicer (optional)

Ingredients

Chicken

  • lbs chicken thighs or breasts boneless, skinless
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp smoked paprika
  • ½ tsp cumin
  • 1 tbsp olive oil

Honey Chipotle Sauce

  • cup honey
  • 2–3 chipotle peppers in adobo minced (adjust to heat preference)
  • 2 tbsp adobo sauce
  • 2 tbsp soy sauce or tamari
  • 1 tbsp apple cider vinegar or lime juice
  • 3 cloves garlic minced
  • 1 tbsp ketchup or tomato paste optional, for body

To Finish

  • Juice of ½ lime
  • Fresh cilantro chopped (optional)

Instructions

Season the chicken

  • Pat chicken dry. Season both sides with salt, pepper, smoked paprika, and cumin.

Sear

  • Heat olive oil in a large skillet over medium-high heat. Sear chicken 4–5 minutes per side until deeply golden. Remove and set aside.

Make the sauce

  • Lower heat to medium. Add garlic and cook 30 seconds. Stir in honey, chipotle peppers, adobo sauce, soy sauce, vinegar (or lime), and ketchup if using. Simmer 2–3 minutes until slightly thickened.

Glaze the chicken

  • Return chicken to skillet, spooning sauce over the top. Simmer 5–8 minutes, flipping once, until chicken is cooked through and sauce is sticky.

Finish & serve

  • Squeeze lime juice over the chicken and garnish with cilantro.

Notes

  • Chicken choice: Thighs stay juicier and handle the sticky glaze best, but breasts work well if you don’t overcook them. If using breasts, pull them as soon as they reach 165°F to keep them tender.
  • Chipotle peppers: Chipotles in adobo vary in heat by brand. Start with fewer peppers, taste the sauce, and add more if needed. You can also blend the sauce for a smoother glaze.
  • Sweetness balance: If your honey is very sweet, add an extra splash of lime juice or apple cider vinegar to keep the sauce from tasting heavy.
  • Sauce thickness: The glaze thickens as it simmers and even more as it cools. If it gets too thick, loosen it with a tablespoon or two of water or chicken broth.
  • Caramelization tip: For extra sticky edges, spoon sauce over the chicken and let it simmer uncovered for the last 1–2 minutes, watching closely to avoid burning.
  • Make-ahead friendly: The sauce can be made up to 3 days in advance and stored in the fridge. Reheat gently before adding to the chicken.
  • Substitutions:
    • Honey → maple syrup or agave
    • Soy sauce → tamari or coconut aminos
    • Apple cider vinegar → rice vinegar or extra lime juice
  • Leftovers: Excellent chopped into tacos, rice bowls, quesadillas, or wraps the next day—the flavor intensifies overnight.

🍽️ Serving Ideas

  • Over cilantro lime rice or buttered jasmine rice
  • In tacos with slaw and crema
  • With roasted sweet potatoes or grilled corn
  • Sliced over salads with avocado

❓ Frequently Asked Questions (FAQ)

Can I use chicken breasts instead of thighs?
Yes. Chicken breasts work well, but they cook faster and can dry out if overcooked. Slice thicker breasts in half lengthwise and remove them from heat as soon as they reach 165°F.

Is honey chipotle chicken very spicy?
It’s mildly to moderately spicy. The honey balances the heat from the chipotle peppers. You can easily adjust the spice level by using fewer chipotles or scraping out the seeds.

Can I make this dish ahead of time?
Yes. Honey chipotle chicken can be cooked up to 2 days in advance and reheated gently on the stovetop or in the microwave. The flavors deepen as it rests.

What can I serve with honey chipotle chicken?
It pairs well with rice, quinoa, roasted vegetables, corn, mashed potatoes, or tucked into tacos, burrito bowls, or wraps.

Can I make this recipe dairy-free and gluten-free?
The recipe is naturally dairy-free. To keep it gluten-free, use tamari or a certified gluten-free soy sauce.

Can I double the sauce?
Absolutely. If you love extra glaze for drizzling over rice or vegetables, simply double the sauce ingredients and simmer a little longer to thicken.

Can this be cooked on the grill?
Yes. Grill the chicken separately, then brush with the honey chipotle sauce during the last few minutes of cooking to prevent burning.
