This Honey Chipotle Chicken is sticky, smoky, sweet, and just the right amount of spicy. Juicy chicken is seared until golden, then coated in a glossy honey–chipotle sauce with garlic, lime, and a touch of soy for deep savory balance. It’s weeknight-easy but bold enough for company.

Instructions
Season the chicken
Pat chicken dry. Season both sides with salt, pepper, smoked paprika, and cumin.
Sear
Heat olive oil in a large skillet over medium-high heat. Sear chicken 4–5 minutes per side until deeply golden. Remove and set aside.
Make the sauce
Lower heat to medium. Add garlic and cook 30 seconds. Stir in honey, chipotle peppers, adobo sauce, soy sauce, vinegar (or lime), and ketchup if using. Simmer 2–3 minutes until slightly thickened.
Glaze the chicken
Return chicken to skillet, spooning sauce over the top. Simmer 5–8 minutes, flipping once, until chicken is cooked through and sauce is sticky.
Finish & serve
Squeeze lime juice over the chicken and garnish with cilantro.
Notes
Chicken choice: Thighs stay juicier and handle the sticky glaze best, but breasts work well if you don’t overcook them. If using breasts, pull them as soon as they reach 165°F to keep them tender.
Chipotle peppers: Chipotles in adobo vary in heat by brand. Start with fewer peppers, taste the sauce, and add more if needed. You can also blend the sauce for a smoother glaze.
Sweetness balance: If your honey is very sweet, add an extra splash of lime juice or apple cider vinegar to keep the sauce from tasting heavy.
Sauce thickness: The glaze thickens as it simmers and even more as it cools. If it gets too thick, loosen it with a tablespoon or two of water or chicken broth.
Caramelization tip: For extra sticky edges, spoon sauce over the chicken and let it simmer uncovered for the last 1–2 minutes, watching closely to avoid burning.
