  • Parchment paper
  • Mixing bowls (medium and large)
  • Electric mixer (hand mixer or stand mixer)
  • Rubber spatula
  • Measuring cups and spoons
  • Small saucepan (for dragonfruit swirl)
  • Whisk
  • Skewer or butter knife (for swirling)
  • wire cooling rack
  • Sharp knife (for slicing bars)

Ingredients

Crust

  • 1 ½ cups vanilla wafer crumbs or graham crackers
  • 3 tbsp granulated sugar
  • 6 tbsp unsalted butter melted
  • Pinch of salt

Dragonfruit Swirl

  • ¾ cup pink dragonfruit purée fresh or frozen, thawed
  • 2 tbsp sugar
  • 1 tsp lemon juice
  • 1 tsp cornstarch

Cheesecake Filling

  • 16 oz 2 blocks cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs room temperature
  • ½ cup sour cream
  • 1 tsp vanilla extract
  • ¼ tsp salt

Instructions

Prep

  • Heat oven to 325°F (163°C).
  • Line a 9×9 pan with parchment, leaving overhang.

Crust

  • Mix crumbs, sugar, butter, and salt.
  • Press firmly into pan.
  • Bake 10 minutes; cool slightly.

Dragonfruit Swirl

  • In a small saucepan, whisk purée, sugar, lemon juice, and cornstarch.
  • Simmer 2–3 minutes until lightly thickened. Cool.

Cheesecake Filling

  • Beat cream cheese and sugar until smooth.
  • Add eggs one at a time.
  • Mix in sour cream, vanilla, and salt just until combined.

Assemble

  • Pour filling over crust.
  • Dollop dragonfruit swirl on top; gently marble with a skewer.

Bake

  • Bake 38–42 minutes, until edges are set and center slightly jiggles.
  • Cool to room temp, then chill 4 hours (or overnight).

Slice

  • Lift out, wipe knife between cuts, and slice into bars.

Notes

  • Use pink dragonfruit (pitaya) for the best color and flavor; white dragonfruit will taste milder and produce a pale swirl.
  • Room-temperature cream cheese and eggs are essential for a smooth, lump-free cheesecake batter.
  • Do not overmix after adding the eggs—overmixing can cause cracks and a dense texture.
  • The center should jiggle slightly when removed from the oven; it will fully set as it chills.
  • For clean, sharp slices, chill thoroughly and wipe the knife between cuts.
  • If your dragonfruit purée is very watery, simmer it an extra minute to concentrate color and flavor.
  • Bars keep well covered in the refrigerator for up to 4 days or can be frozen up to 1 month (thaw overnight in the fridge).

FAQ

Can I use frozen dragonfruit instead of fresh?
Yes! Frozen pink dragonfruit works perfectly. Thaw it completely and blend until smooth before cooking it into the swirl.

Does dragonfruit add a strong flavor to the cheesecake?
No—dragonfruit is very mild. It adds a subtle fruity freshness and beautiful color without overpowering the classic cheesecake taste.

Can I make these cheesecake bars ahead of time?
Absolutely. These bars are ideal for making a day in advance since chilling overnight improves both texture and flavor.

What’s the best way to store leftovers?
Store the bars in an airtight container in the refrigerator for up to 4 days, or freeze them individually wrapped for longer storage.

Can I make this recipe gluten-free?
Yes. Simply use gluten-free vanilla wafers or graham crackers for the crust.

Why did my cheesecake crack slightly?
Small cracks can happen if the bars are slightly overbaked or cooled too quickly. Since these are bars with a swirl topping, minor cracks won’t affect flavor or appearance.
