Instructions

Infuse the lavender

  • Grind the dried lavender using a mortar & pestle or spice grinder until very fine. This prevents a gritty texture.

Add dry ingredients

Notes

  • Use culinary-grade lavender only; decorative or craft lavender can taste bitter.
  • Grind the lavender very finely to avoid a gritty texture and ensure even flavor distribution.
  • Lavender flavor develops as the cookies cool, so avoid adding extra at the start.
  • Chill the dough for at least 30 minutes to prevent spreading and keep clean edges.
  • Bake until the cookies are just set and pale, with only the slightest hint of golden color on the edges.
  • For a softer floral profile, choose a mild honey (such as clover or wildflower).
  • Store cookies in an airtight container at room temperature for up to 5 days, or freeze for up to 2 months.
  • These cookies pair especially well with black tea, Earl Grey, chamomile, or vanilla lattes.

❓ FAQ – Honey Lavender Shortbread Cookies

Can I taste the lavender strongly?
No. When used in small, finely ground amounts, lavender adds a soft, calming aroma rather than a strong floral flavor. The honey keeps it balanced and mellow.

Do these cookies spread while baking?
Very little. Shortbread dough is low in moisture, and chilling the dough helps the cookies hold their shape nicely.

Can I make the dough ahead of time?
Yes. The dough can be refrigerated for up to 48 hours or frozen for up to 2 months. Let it soften slightly before slicing or rolling.

What’s the best way to shape these cookies?
Both slicing and cutting work well. For clean edges and minimal handling, roll the dough into a log and slice into rounds.

Can I substitute fresh lavender?
Fresh lavender is not recommended, as it contains more moisture and can overpower the flavor. Dried culinary lavender gives the best results.

Are these cookies very sweet?
No. They’re intentionally lightly sweet, with honey providing a gentle warmth rather than a sugary punch.

Can these be packaged for gifting?
Absolutely. Once fully cooled, they hold up well in cookie boxes, cellophane bags, or tins, making them ideal for gifting or bake sales.
