Equipment

  • Mixing bowl
  • Measuring cups and spoons
  • Small saucepan
  • Whisk or spoon
  • skillet or grill pan (or outdoor grill)
  • Spatula
  • Tongs
  • Cutting board
  • knife

Ingredients

Burger Patties

  • 1 lb ground beef 80/20 preferred
  • 1 tsp soy sauce
  • ½ tsp garlic powder
  • ½ tsp ginger powder
  • Black pepper to taste

Teriyaki Sauce

  • ½ cup soy sauce
  • ¼ cup brown sugar or honey
  • 2 tbsp mirin or rice vinegar + pinch of sugar
  • 1 tsp sesame oil
  • 1 clove garlic minced
  • 1 tsp grated fresh ginger
  • 1 tsp cornstarch + 1 tbsp water slurry

Pineapple

  • 4 pineapple rings fresh or canned, drained
  • 1 tbsp butter or oil

Toppings

  • 4 slices provolone Swiss, or mozzarella
  • Shredded lettuce or napa cabbage
  • Sliced tomato optional
  • Pickled red onions or Japanese pickles optional
  • Toasted burger buns

Instructions

Make the teriyaki sauce

  • In a small saucepan, combine soy sauce, brown sugar, mirin, sesame oil, garlic, and ginger. Bring to a gentle simmer. Stir in cornstarch slurry and cook until thick and glossy. Remove from heat.

Prepare the patties

  • In a bowl, gently mix ground beef with soy sauce, garlic powder, ginger powder, and black pepper. Form into 4 patties.

Cook the burgers

  • Heat a skillet or grill over medium-high heat. Cook patties 3–4 minutes per side until cooked to your liking. Brush generously with teriyaki sauce during the last minute of cooking.

Caramelize the pineapple

  • In the same pan, melt butter and cook pineapple rings 2–3 minutes per side until golden and caramelized.

Melt the cheese

  • Place cheese slices on burgers, cover briefly, and allow to melt.

Assemble

  • Toast buns. Layer lettuce, teriyaki-glazed burger, caramelized pineapple, extra teriyaki sauce, and any optional toppings. Top with bun and serve immediately.

Notes

  • Don’t overmix the patties: Gently mix the beef just until combined to keep the burgers juicy and tender.
  • Teriyaki thickness: If the sauce thickens too much, stir in 1–2 tablespoons of water to loosen it.
  • Pineapple choice: Fresh pineapple caramelizes best, but canned rings work well—just pat them dry first.
  • Cheese options: Mild, melty cheeses like mozzarella, provolone, or Swiss pair best with teriyaki flavors.
  • Sweet–savory balance: If your teriyaki sauce is very sweet, add a splash of rice vinegar or soy sauce to balance it.
  • Make it ahead: Teriyaki sauce can be made up to 3 days in advance and stored in the fridge.
  • Grill-friendly: This recipe works great on an outdoor grill—just glaze the burgers near the end to avoid burning.

🇯🇵 Optional Japanese-Style Add-Ons

  • Kewpie mayo drizzle
  • Furikake sprinkle on buns
  • Shredded cabbage slaw with sesame dressing
  • Fried egg (teriyaki burgers love eggs 🍳)

❓ FAQ – Japanese-Inspired Teriyaki Pineapple Burger

Can I use a different protein instead of beef?

Does this burger work without cheese?
Absolutely. The teriyaki glaze and pineapple provide plenty of flavor on their own if you prefer a dairy-free option.

Can I make the teriyaki sauce ahead of time?
Yes. Homemade teriyaki sauce can be prepared up to 3 days in advance and stored in the refrigerator.

What kind of buns are best for this burger?
Soft brioche buns or sesame buns hold up well to the sauce and complement the sweet-savory flavors.

Is fresh pineapple necessary?
Fresh pineapple caramelizes best, but canned pineapple rings are a convenient alternative—just pat them dry before cooking.

How can I make this burger spicier?
Add sriracha, chili oil, or a pinch of crushed red pepper to the teriyaki sauce for extra heat.
