Instructions
Make the teriyaki sauce
In a small saucepan, combine soy sauce, brown sugar, mirin, sesame oil, garlic, and ginger. Bring to a gentle simmer. Stir in cornstarch slurry and cook until thick and glossy. Remove from heat.
Prepare the patties
In a bowl, gently mix ground beef with soy sauce, garlic powder, ginger powder, and black pepper. Form into 4 patties.
Cook the burgers
Heat a skillet or grill over medium-high heat. Cook patties 3–4 minutes per side until cooked to your liking. Brush generously with teriyaki sauce during the last minute of cooking.
Caramelize the pineapple
In the same pan, melt butter and cook pineapple rings 2–3 minutes per side until golden and caramelized.
Melt the cheese
Place cheese slices on burgers, cover briefly, and allow to melt.
Assemble
Toast buns. Layer lettuce, teriyaki-glazed burger, caramelized pineapple, extra teriyaki sauce, and any optional toppings. Top with bun and serve immediately.
Notes
Don’t overmix the patties: Gently mix the beef just until combined to keep the burgers juicy and tender.
Teriyaki thickness: If the sauce thickens too much, stir in 1–2 tablespoons of water to loosen it.
Pineapple choice: Fresh pineapple caramelizes best, but canned rings work well—just pat them dry first.
Cheese options: Mild, melty cheeses like mozzarella, provolone, or Swiss pair best with teriyaki flavors.
Sweet–savory balance: If your teriyaki sauce is very sweet, add a splash of rice vinegar or soy sauce to balance it.
Make it ahead: Teriyaki sauce can be made up to 3 days in advance and stored in the fridge.
Grill-friendly: This recipe works great on an outdoor grill—just glaze the burgers near the end to avoid burning.
