Ingredients

Root Beer Layer

  • 2 cups white sugar
  • ½ cup heavy cream
  • ½ cup unsalted butter
  • ¼ cup root beer
  • 1 ½-2 tsp root beer extract
  • 1 7 oz jar marshmallow crème
  • 1 cup white chocolate chips
  • Optional: 2–3 drops brown food coloring to mimic root beer color

Vanilla “Float” Layer

  • 1 cup white chocolate chips
  • ½ cup sweetened condensed milk
  • 1 tsp vanilla extract

Instructions

Prepare the pan

  • Line an 8×8 pan with parchment paper and lightly butter or spray it.

Make the Root Beer Fudge Layer

    Heat the root beer mixture

    • In a medium saucepan, combine: sugar, heavy cream, butter, root beer.
    • Bring to a gentle boil over medium heat, stirring often.

    Boil

    • Let it boil for 4–5 minutes, stirring constantly, until slightly thickened.

    Add flavor + chocolate

    • Remove from heat and stir in: root beer extract, white chocolate chips, and marshmallow crème.
    • Mix until completely smooth. (If using food coloring, add it now.)

    Pour into the pan

    • Spread evenly into the prepared pan.

    Make the Vanilla Float Layer

      Melt

      • In a microwave-safe bowl, melt together: white chocolate chips and sweetened condensed milk.
      • Stir until smooth.

      Add vanilla

      • Stir in the vanilla extract.

      Layer on top

      • Carefully pour the vanilla layer over the root beer layer.
      • Use a spatula to smooth the top. (Optional: Swirl the layers slightly for a pretty ripple effect.)

      Chill

      • Refrigerate at least 3 hours or until fully firm.
      • Cut into squares.
