Pour the mixture into the prepared pan and smooth the top.
Chill
Refrigerate for at least 2 hours, or until firm.
Slice & serve
Lift out using parchment, slice into squares, and enjoy!
Notes
Drain the crushed pineapple extremely well to avoid excess moisture that can prevent the fudge from setting properly.
Use low heat only when melting white chocolate to prevent scorching or separation.
Pineapple extract strength varies by brand—start with 1 teaspoon and increase gradually for best flavor control.
For a smoother texture, finely chop the crushed pineapple before adding.
A small pinch of salt balances the sweetness and enhances the pineapple flavor.
Chill the fudge fully before slicing for clean, sharp edges.
Store in an airtight container in the refrigerator for up to 7 days, or freeze for up to 2 months.
Optional Variations
Pineapple Coconut Fudge: Add ¼ cup toasted coconut flakes
Swirled Dole Whip Fudge: Swirl in vanilla fudge before chilling
Frozen Treat Style: Serve chilled straight from the fridge for a firmer bite
