  • ¼ cup heavily reduced watermelon puree
  • 1 tablespoon granulated sugar
  • ½ teaspoon lemonade concentrate
  • ½ teaspoon cornstarch

Instructions

Step 1: Reduce the Watermelon

  • Blend seedless watermelon until smooth, then strain thoroughly through a fine mesh sieve. Simmer the puree over medium-low heat for 15–20 minutes until heavily reduced and lightly syrupy. You should end with about ¼ cup for the filling and ¼ cup for the glaze. Cool completely before using.

Step 2: Prepare the Crust

  • Preheat oven to 325°F. Mix vanilla wafer crumbs, melted butter, sugar, and salt until evenly coated. Press firmly into the bottom of a greased 9-inch springform pan. Bake for 8–9 minutes, then cool slightly.

Step 3: Make the Filling

  • Beat cream cheese and sugar until completely smooth. Mix in sour cream, heavy cream, lemonade concentrate, lemon juice, vanilla, freeze-dried watermelon powder, cornstarch, and salt. Add eggs one at a time on low speed. Fold in the cooled reduced watermelon puree and add pink food coloring if desired. Do not overmix.

Step 4: Bake the Cheesecake

  • Pour the filling into the crust. Wrap the springform pan tightly with foil and place into a roasting pan. Add hot water halfway up the sides of the springform pan. Bake for 50–55 minutes until the edges are set while the center remains slightly jiggly. Turn the oven off, crack the oven door open, and cool the cheesecake inside the oven for 1 hour. Refrigerate overnight.
