  • 2 tablespoons milk

  • ½ teaspoon watermelon extract
  • Tiny drop pink gel coloring

Instructions

  • Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper and lightly grease.
  • In a large bowl, whisk together the melted butter and granulated sugar until smooth and glossy.
  • Add the egg, watermelon extract, vanilla extract, and pink gel food coloring (if using). Mix until fully combined and evenly pink.
  • Stir in the flour, baking powder, and salt. Mix just until combined — do not overmix.
  • Add the milk and stir until the batter is thick and smooth.
  • Spread the batter evenly into the prepared pan.
