Instructions
Make the Panade
In a small bowl, combine panko breadcrumbs and milk. Let sit for 2–3 minutes until absorbed.
Mix the Meatballs
In a large bowl, add ground chicken, panade, egg, garlic, ginger, green onions, soy sauce, sesame oil, salt, pepper, fish sauce, and sugar.
Mix gently with your hands until just combined and the mixture holds together when pressed. Do not overmix.
Let the mixture rest for 5–10 minutes.
Shape the Meatballs
Form into evenly sized meatballs, about 1.25 inches (2 tablespoons each).
If the mixture feels too wet, add 1 tablespoon additional panko.
Sear the Meatballs
