Notes

1. Best Mango for Mango Chicken
Use a ripe but firm mango for the best texture and natural sweetness. Ataulfo (honey) mangoes work especially well because they break down smoothly into a thick mango glaze. If your mango is overly soft, the sauce may become thinner.
2. How to Thicken the Mango Sauce
If you prefer a thicker mango chicken sauce, simmer uncovered for an extra 3–5 minutes until reduced. You can also mash some of the mango pieces directly in the skillet to create a naturally thickened, sticky glaze without cornstarch.
3. Onion Matters in This Recipe
Caramelized onions are key to the deep flavor in this mango chicken skillet. Cook them low and slow until golden brown — rushing this step will reduce the sweet, savory depth that balances the mango.
4. Make It Spicy
For a spicy mango chicken variation, add red pepper flakes, diced jalapeño, or a dash of hot sauce while the sauce simmers. The sweet mango pairs beautifully with heat.
5. Chicken Substitutions
Boneless skinless chicken thighs stay juicy and tender, but chicken breasts also work. If using breasts, reduce cook time slightly to prevent drying out.
6. Storage & Reheating
Store leftover mango chicken in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop to maintain the thick mango glaze. This recipe also freezes well for up to 2 months.
7. Serving Suggestions
Serve this sweet and smoky mango chicken over jasmine rice, coconut rice, mashed potatoes, or inside toasted brioche buns for a flavorful mango chicken sandwich.
