Notes
Crispy chicken wings tip: Pat the wings completely dry before seasoning. Removing moisture is the key to achieving crispy oven baked chicken wings without frying.
Use baking powder (not baking soda): Baking powder helps render the fat and creates that signature crispy skin. Always use aluminum-free baking powder to avoid any metallic taste.
Do not sauce too early: For the best texture, bake or air fry the wings until fully crispy before adding the sauce. This prevents soggy wings and ensures a sticky BBQ glaze that clings perfectly.
Reduce the root beer sauce properly: Simmer the sauce until it thickens and coats the back of a spoon. This step transforms the root beer into a rich, caramelized BBQ glaze.
Adjust sauce consistency: If the sauce becomes too thick, add a splash of root beer or water. If it’s too thin, continue simmering until reduced.
Don’t skip the final broil or air fry step: Finishing the wings after saucing caramelizes the sugars and creates that sticky, glossy coating you expect from BBQ chicken wings.
Air fryer option: For air fryer chicken wings, cook at 400°F for 20–25 minutes, shaking halfway, then toss in sauce and cook an additional 4–6 minutes to set the glaze.
Flavor customization: Add more cayenne for heat, or a pinch of smoked paprika for a deeper BBQ flavor. You can also finish with black pepper or flaky salt for extra contrast.
Serving tip: These wings are best served immediately while hot and crispy, making them perfect for game day, parties, or easy weeknight dinners.
