Equipment

  • Small saucepan (for lavender syrup)
  • Fine mesh strainer (to remove lavender)
  • Espresso machine (or coffee maker for strong coffee)
  • Milk frother (optional, for hot latte)
  • Measuring cups and spoons
  • Glass or mug

Ingredients

  • 1–2 shots blonde espresso or ½ cup strong brewed coffee
  • ¾ cup oat milk recommended for Starbucks-style texture
  • 1-2 tablespoons lavender syrup
  • Ice for iced version

Optional Homemade Lavender Syrup (Recommended for best flavor)

  • ½ cup water
  • ½ cup granulated sugar
  • 1 tablespoon dried culinary lavender

Instructions

Make the lavender syrup (if using homemade)

  • In a small saucepan, combine water, sugar, and dried culinary lavender. Heat over medium until gently simmering, stirring until sugar fully dissolves. Remove from heat and let steep for 5–10 minutes. Strain out lavender and allow syrup to cool.

Brew the espresso

  • Prepare 1–2 shots of blonde espresso. If using coffee, brew it strong for best flavor.

Mix the base

  • Add lavender syrup (or lavender sugar/powder) to a glass or mug. Pour in the hot espresso and stir well until fully combined.

Add milk and finish

  • For iced: Fill the glass with ice, then pour oat milk over top and stir.
  • For hot: Heat and froth the oat milk, then pour over the espresso mixture.

Notes

  • Use culinary-grade lavender only—non-culinary lavender can taste bitter or soapy.
  • For the most authentic Starbucks flavor, use blonde espresso and oat milk.
  • Adjust the lavender syrup to control sweetness and floral intensity.
  • Do not over-steep the lavender when making syrup, or it can become overpowering.
  • Oat milk creates the creamiest, smoothest texture, but any milk can be substituted.
  • For a stronger coffee flavor, use 2 shots of espresso instead of one.
  • You can substitute the lavender syrup with 1–2 teaspoons lavender sugar or finely ground culinary lavender, but syrup gives the smoothest, most balanced flavor.
  • Store leftover lavender syrup in an airtight container in the refrigerator for up to 1 week.
  • This recipe works for both iced and hot lavender lattes without changing ingredient ratios.
