Cook the Bacon Cook bacon slowly over medium heat until deeply crisp and rendered.
Transfer to paper towels and keep warm.
Reserve 1 tablespoon bacon fat for brushing buns or cooking patties (optional but excellent).
Make the Beer Cheese Sauce Melt butter in a saucepan over medium heat.
Whisk in flour and cook 1 minute (don’t brown).
Slowly whisk in milk, then beer.
Simmer until slightly thickened (2–3 minutes).
Lower heat and stir in cheddar, Dijon, garlic powder, and smoked paprika.
Stir until smooth and glossy. Keep warm on very low heat.

Cook the Burger Patties Divide beef into 4 loose balls (don’t over-pack).
Season generously with salt and pepper.
Grill or sear in a hot skillet (cast iron ideal) for:
3–4 minutes per side for medium
Optional: brush with reserved bacon fat while cooking.

Choose the right beer: Mild beers (lager, amber ale, wheat beer) give the smoothest beer cheese. Hoppy beers like IPAs can turn the sauce bitter.
