Ingredients

For the Smashburger Tacos

  • 1 lb ground beef 80/20 recommended
  • 8 small flour tortillas
  • 8 slices American cheese
  • 1 cup shredded iceberg lettuce
  • ½ cup diced white onion
  • ½ cup dill pickle slices
  • 1 tbsp butter or oil
  • Salt and black pepper to taste

Burger Sauce

  • ½ cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp pickle relish
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • ½ tsp sugar
  • 1 tsp pickle juice optional but great

Instructions

Make the Burger Sauce

  • In a small bowl, whisk together mayonnaise, ketchup, mustard, relish, garlic powder, paprika, sugar, and pickle juice. Set aside.

Prepare the Beef

  • Divide ground beef into 8 equal portions (about 2 oz each). Roll loosely into balls.

Press Beef onto Tortillas

  • Place each beef ball onto a tortilla and press it thinly across the surface so the meat covers most of the tortilla. Season with salt and pepper.

Cook the Smashburger Tacos

  • Heat a large skillet or griddle over medium-high heat.
  • Place the tortillas meat side down in the hot pan. Press firmly with a spatula so the beef smashes thin and develops a crispy crust.
  • Cook for about 2–3 minutes until browned and crispy.

Flip and Add Cheese

  • Flip the taco so the tortilla side is down. Place a slice of American cheese on the beef and cook another 1 minute until the tortilla is toasted and the cheese melts.

Add Toppings

  • Remove from pan and top with:

  • pickle slices
