Instructions
Make the Burger Sauce
In a small bowl, whisk together mayonnaise, ketchup, mustard, relish, garlic powder, paprika, sugar, and pickle juice. Set aside.
Prepare the Beef
Divide ground beef into 8 equal portions (about 2 oz each). Roll loosely into balls.
Press Beef onto Tortillas
Place each beef ball onto a tortilla and press it thinly across the surface so the meat covers most of the tortilla. Season with salt and pepper.
Cook the Smashburger Tacos
Heat a large skillet or griddle over medium-high heat.
Place the tortillas meat side down in the hot pan. Press firmly with a spatula so the beef smashes thin and develops a crispy crust.
Cook for about 2–3 minutes until browned and crispy.
Flip and Add Cheese
Flip the taco so the tortilla side is down. Place a slice of American cheese on the beef and cook another 1 minute until the tortilla is toasted and the cheese melts.
Add Toppings
Remove from pan and top with:
shredded lettuce
diced onions
pickle slices
a generous drizzle of burger sauce
Fold like a taco and serve immediately.
Notes
• Use 80/20 ground beef for the best smashburger flavor. The higher fat content helps create the signature crispy edges while keeping the burger juicy.• Press the beef thinly onto the tortilla. A thin layer of beef ensures it cooks quickly and develops a classic smashburger crust.• Cook meat-side down first. This step is essential for getting the crispy caramelized smashburger texture.• Use small street-size tortillas. They cook faster and create the perfect smashburger taco ratio of beef, tortilla, and toppings.• Serve immediately for maximum crispiness. Smashburger tacos are best fresh off the skillet while the tortilla is toasted and the cheese is melted.• Customize the toppings. Popular additions include tomato slices, shredded lettuce, crispy bacon, jalapeños, or extra burger sauce.• Make it extra viral-worthy. Smashburger tacos are trending because they combine two comfort food favorites—cheeseburgers and tacos—into one easy, crispy recipe perfect for quick dinners or game day meals.
