Ingredients

  • 1 20 ounce bag frozen shredded hash browns, thawed and dried very well
  • 2 tablespoons melted butter
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 3/8 teaspoon kosher salt

For the Sausage Layer

  • 1 pound breakfast sausage
  • 1/2 small yellow onion finely diced

For the Egg Mixture

  • 8 large eggs
  • 3/4 cup whole milk
  • 2 tablespoons sour cream
  • 3/8 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Worcestershire sauce

  • 1 1/4 cups freshly shredded sharp cheddar cheese divided
  • 1/2 cup Monterey Jack cheese

Instructions

Step 1: Prepare the Oven

  • Preheat the oven to 375°F. Grease a 9x13-inch baking dish.

Step 2: Cook the Sausage

  • Cook the sausage and diced onion in a large skillet over medium heat until browned and fully cooked. Break the sausage into crumbles while cooking. Drain the excess grease thoroughly and allow the mixture to cool slightly.

Step 3: Pre-Bake the Hash Browns

  • In a large bowl, toss the hash browns with the melted butter, garlic powder, smoked paprika, and 3/8 teaspoon kosher salt until evenly coated. Spread the potatoes evenly into the prepared baking dish. Bake for 10–12 minutes to lightly crisp and dry the potatoes.

Step 4: Add the Sausage and Cheese

  • Remove the baking dish from the oven. Sprinkle the cooked sausage mixture evenly over the potatoes. Top with 1 cup of the cheddar cheese and all of the Monterey Jack cheese.

  • In a large bowl, whisk together the eggs, whole milk, sour cream, remaining 3/8 teaspoon kosher salt, black pepper, and Worcestershire sauce until smooth and fully combined.

  • Pour the egg mixture evenly over the casserole. Sprinkle the remaining 1/4 cup cheddar cheese evenly over the top.

Step 7: Bake

  • Bake uncovered for 28–35 minutes, or until the center is set but still soft and the edges are lightly golden brown. A knife inserted near the center should come out mostly clean. If the top begins browning too quickly, loosely tent with foil during the final minutes of baking.

Step 8: Rest and Serve

  • Allow the casserole to rest for 10 minutes before slicing. Garnish with sliced green onions before serving.
