This Rose Pistachio Nougat is a soft, chewy confection infused with delicate rosewater and filled with buttery pistachios for the perfect balance of floral sweetness and nutty richness. Lightly aromatic and beautifully elegant, each bite feels indulgent without being overwhelming. Ideal for gifting, dessert platters, or special occasions, this nougat brings a refined, Middle Eastern–inspired twist to a classic candy—simple to make, stunning to serve, and unforgettable in flavor.
Line an 8x8-inch baking pan with parchment paper. Mix powdered sugar and cornstarch together and dust the bottom of the pan evenly.
Cook the Sugar Syrup
In a medium saucepan combine sugar, honey, corn syrup, and water. Cook over medium heat without stirring until mixture reaches 250°F (soft-ball stage).
Whip the Egg Whites
While syrup cooks, beat egg whites and salt until soft peaks form.
Stream in the Hot Syrup
With mixer running on low speed, slowly pour the hot syrup into the egg whites. Once incorporated, increase speed to medium-high.
Beat Until Thick
Continue beating for 7–10 minutes until mixture becomes thick, glossy, and holds its shape.
Add Flavor
Mix in rose water and vanilla extract until fully combined.
Fold in Pistachios
Gently fold in roasted pistachios until evenly distributed throughout the nougat.
Spread and Set
Transfer mixture to prepared pan. Smooth the top with a spatula. Dust the top lightly with remaining powdered sugar mixture.
Let set at room temperature for 6 hours or overnight until firm.
Cut into Squares
Lift nougat from pan. Use a lightly oiled sharp knife to cut into squares.
Notes
Use a Candy Thermometer for Best Texture
Cooking the sugar syrup to the soft-ball stage ensures the nougat sets properly while staying soft and chewy. If the syrup is undercooked, the nougat may remain sticky. If overcooked, the nougat can become too firm.
Room Temperature Egg Whites Work Best
Room temperature egg whites whip more easily and create better volume. This helps the nougat become light while still maintaining a chewy candy texture.
Don’t Use Too Much Rose Water
A small amount provides a delicate floral flavor, while too much can make the nougat taste perfumey. Start with 3/4 teaspoon and adjust slightly if needed.
Use Roasted Unsalted Pistachios
Roasted pistachios provide the best flavor and texture. Salted pistachios can be used, but reduce or omit the added salt in the recipe to keep the sweetness balanced.
Dusting Prevents Sticking
Dusting the pan with powdered sugar and cornstarch prevents sticking and makes slicing easier. This step is important because nougat is naturally sticky.
Let the Nougat Set Completely
Allow the nougat to set fully before cutting. Cutting too early can cause the candy to stretch and lose its shape.
How to Cut Clean Squares
Lightly oil your knife and wipe between cuts. This helps create neat, professional-looking nougat squares.
Storage Tip
Store nougat squares separated by parchment paper to prevent sticking. This keeps the candy soft, chewy, and easy to serve.
