Ingredients

Dry Ingredients

  • 2 ¼ cups 270g all-purpose flour
  • 1 tbsp 8g cornstarch
  • ½ tsp baking soda
  • ¼ tsp baking powder
  • ¾ tsp cardamom
  • ½–¾ tsp fine salt see notes
  • ½ cup 60g finely chopped pistachios
  • 2 tbsp crushed pistachios for topping

Wet Ingredients

  • ¾ cup 170g unsalted butter, softened
  • 1 cup 200g granulated sugar
  • ¼ cup 50g light brown sugar
  • 1 large egg
  • 1 egg yolk

Flavoring

  • 1 tsp sparkling wine extract optional
  • ¾ tsp rose extract
  • 1 tsp rose water max 1¼ tsp
  • 1 tsp vanilla extract
  • Optional: 1–2 drops pink food coloring

Optional Glaze — Rose Champagne Glaze

  • ½ cup 60g powdered sugar
  • 1–2 tsp milk or rose water
  • ⅛–¼ tsp sparkling wine extract optional
  • Tiny drop pink food coloring
  • Pinch of salt

Instructions

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Cream butter and sugars for 2–3 minutes until pale and fluffy.
  • Add egg and yolk, mixing until smooth. Stir in rose extract, rose water, vanilla, and optional sparkling wine extract and food coloring.
  • In a separate bowl, whisk dry ingredients (flour, cornstarch, baking soda, baking powder, cardamom, salt).
  • Mix dry into wet just until combined. Do not overmix.
  • Fold in pistachios gently.
  • Scoop dough into 1.5–2 tablespoon portions and place on baking sheet. Lightly flatten and top with crushed pistachios.
  • Chill dough for 20–30 minutes.
  • Bake 10–12 minutes until edges are set and centers remain soft.
  • Cool on baking sheet for 5 minutes, then transfer to rack.
  • Make glaze by mixing ingredients until smooth and drizzle consistency. Drizzle over cooled cookies.

Notes

  • For best results, measure flour correctly using the spoon-and-level method or a kitchen scale. Too much flour can make the cookies dry and prevent proper spread.
  • Chilling the dough for 20–30 minutes is essential. This step helps control spreading, improves texture, and deepens the flavor of these rose pistachio cookies.
  • Use cool room temperature butter (not melted or greasy). Butter that is too warm will cause the cookies to spread too much and lose their soft, bakery-style texture.
  • Be careful with rose extract and rose water. These are strong floral ingredients, and adding too much can create a perfumey or soapy taste. Stick to the recommended amounts for a balanced flavor.
  • The sparkling wine extract is optional and does not affect the structure of the cookies. If you skip it, substitute with a little vanilla and lemon zest to maintain a bright, elegant flavor profile.
  • For the best texture, use finely chopped pistachios instead of ground pistachios. Small pieces provide a better bite and keep the nutty flavor noticeable throughout the cookies.
  • If using salted pistachios, reduce the added salt in the dough to avoid overly salty cookies.
  • Bake just until the edges are set and the centers look slightly underbaked. The cookies will continue to firm up as they cool, giving you soft and chewy centers.
  • For a softer, more balanced finish, use milk in the glaze instead of rose water. Rose water in the glaze will create a stronger floral flavor.
  • Store cookies in an airtight container at room temperature for up to 3 days, or refrigerate for up to 5 days. The flavor of these floral cookies actually improves slightly after the first day.
