Instructions

Mix the Dry Ingredients

  • Whisk together flour, pudding mix, baking soda, and salt. Set aside.

Cream the Butter & Sugars

  • Beat butter, brown sugar, and granulated sugar until light and fluffy (about 2 minutes).

Add Eggs & Flavoring

  • Mix in the eggs, vanilla, and pistachio extract (if using).

Combine Wet & Dry

  • Add dry ingredients to the wet mixture. Mix until just combined.

Fold in Mix-Ins

  • Stir in the white chocolate chips and chopped pistachios.

Chill (Optional but Recommended)

  • Chill dough for 20–30 minutes for thicker, softer cookies.

Scoop & Bake

  • Preheat oven to 350°F (175°C).
  • Scoop 2 tbsp-sized dough balls onto a lined sheet.
