Equipment

  • Nonstick skillet
  • Spatula
  • Mixing bowl (if scrambling the eggs)
  • Cutting board
  • Chef’s knife
  • Toaster or oven/toaster oven
  • Measuring spoons
  • Small spoon for spreading pesto

Ingredients

For the Pesto Egg

  • 1–2 large eggs
  • 1 tbsp basil pesto
  • Salt & pepper to taste
  • 1 tsp butter or olive oil

For the Sandwich

  • 1 ciabatta roll or brioche bun or artisan bread
  • 2–3 slices of fresh mozzarella
  • 2–3 slices of ripe tomato
  • Fresh basil leaves
  • 1–2 tsp basil pesto extra for spreading
  • Optional: a drizzle of balsamic glaze
  • Optional: baby spinach

Instructions

Prepare the Bread

  • Slice your ciabatta or bun and lightly toast until golden.
  • Spread a thin layer of pesto on each toasted half.

Cook the Pesto Eggs

  • Heat butter or oil in a pan over medium heat.
  • Crack in the eggs and gently scramble OR cook sunny-side-up—your choice!
  • Stir in 1 tbsp pesto while the eggs are still soft so it melts into them.
  • Season with salt and pepper.

Assemble the Sandwich

  • Place fresh mozzarella on the warm toasted bread (it will soften slightly).
  • Add tomato slices and a pinch of salt for flavor.
  • Spoon the warm pesto eggs on top.
  • Add fresh basil leaves.
  • Drizzle with balsamic glaze if using.
  • Close the sandwich and gently press.

Notes

  • Use fresh mozzarella for the best melt and flavor. Low-moisture mozzarella works too, but fresh mozzarella gives that soft, creamy bite.
  • Toasting the bread is essential. It adds structure and prevents the sandwich from becoming soggy once the tomatoes and eggs go in.
  • Scrambled or fried eggs both work. Scrambled with pesto gives a creamy texture; a fried or over-medium egg gives a delicious runny yolk effect.
  • Salt the tomatoes lightly. This brings out their sweetness and prevents the sandwich from tasting flat.
  • Basil pesto can be homemade or store-bought. If store-bought, taste it first—some brands are saltier, so adjust seasoning accordingly.
  • Add balsamic glaze carefully. A little goes a long way and enhances the caprese flavor beautifully.
  • Layer mozzarella under warm eggs to help it soften and melt naturally.
