  • 1 tsp lime juice
  • 2 cloves garlic minced
  • ½ tsp grated ginger optional
  • 1 tsp cornstarch
  • 1 tbsp water
  • 1 tbsp butter

Instructions

Step 1: Prepare the Wings

  • Preheat oven to 425°F. Line a baking sheet with foil and place a wire rack on top.
  • Pat chicken wings very dry with paper towels. Toss with baking powder, salt, pepper, and garlic powder until evenly coated.
  • Arrange wings in a single layer on the rack.

Step 2: Bake the Wings

  • Bake for 40–45 minutes, flipping halfway through, until wings are golden brown and crispy.

Step 3: Make the Passionfruit Glaze

  • In a small saucepan combine passionfruit puree, honey, brown sugar, soy sauce, lime juice, garlic, and ginger.
  • Bring to a gentle simmer over medium heat and cook for 3–4 minutes.
  • In a small bowl mix cornstarch and water. Stir into the sauce and cook until glossy and slightly thickened, about 30–60 seconds.
  • Remove from heat and stir in butter until smooth.

Step 4: Toss and Finish

  • Place hot wings in a large bowl. Pour glaze over wings and toss until evenly coated.
  • Return wings to oven for 4–6 minutes to caramelize the glaze.
  • Serve warm.
