Equipment

  • 8-inch square baking pan
  • Parchment paper
  • Large heavy-bottomed saucepan
  • Small saucepan
  • Candy thermometer
  • Silicone spatula
  • Heatproof whisk
  • Measuring cups and spoons
  • Sharp knife
  • Cutting board
  • Wax paper or candy wrappers for wrapping the caramels
  • Kitchen scale (optional, for precise measurements)

Ingredients

For the Passionfruit Base

  • 1 ½ cups passionfruit puree strained
  • ⅔ cup heavy cream
  • ½ cup unsalted butter cubed
  • 1 14-ounce can sweetened condensed milk
  • 1 teaspoon vanilla extract

For the Caramel

  • 1 ½ cups granulated sugar
  • ½ cup light corn syrup
  • ¼ cup water
  • ¾ teaspoon fine sea salt

Instructions

  • Line an 8-inch square baking pan with parchment paper, leaving overhang on two sides. Lightly grease the parchment.
  • Add the passionfruit puree to a small saucepan and simmer over medium heat until reduced to ½ cup, about 10 to 15 minutes.
  • Add the heavy cream, butter, and sweetened condensed milk to the reduced puree. Warm over low heat until the butter melts and the mixture is smooth. Keep warm.
  • In a large heavy-bottomed saucepan, combine the sugar, corn syrup, water, and salt.
  • Cook over medium heat without stirring until the mixture turns a light amber color. Gently swirl the pan occasionally for even caramelization.
  • Slowly whisk the warm passionfruit mixture into the caramelized sugar. The mixture will bubble vigorously.
  • Continue cooking, stirring constantly, until the caramel reaches 244°F on a candy thermometer.
  • Remove from the heat and stir in the vanilla extract.
  • Pour the caramel into the prepared pan and smooth the surface.
  • Cool completely at room temperature for 4 to 6 hours.
  • Lift the caramel from the pan using the parchment overhang.
  • Cut into 36 squares and wrap individually in wax paper.

Notes

Use Real Passionfruit Puree for the Best Flavor

For the most authentic passionfruit caramels, use strained passionfruit puree rather than juice. Puree provides a stronger tropical flavor and helps create the sweet-tart balance that makes these homemade caramels so unique.

Reduce the Puree Before Making the Caramel

Reducing the passionfruit puree concentrates its flavor and removes excess moisture. This step is essential for achieving a rich passionfruit taste without making the caramels too soft or sticky.

A Candy Thermometer Is Highly Recommended

For perfectly chewy passionfruit caramels, cook the mixture to 244°F. A candy thermometer helps ensure consistent results and prevents the caramels from becoming too firm or too soft.

Warm the Dairy Mixture Before Adding It

Keeping the passionfruit, cream, butter, and sweetened condensed milk mixture warm helps it blend smoothly with the caramelized sugar. This reduces the risk of the caramel seizing and creates a silky texture.

Don't Rush the Cooling Process

Allow the homemade passionfruit caramels to cool completely at room temperature before cutting. Cooling too quickly in the refrigerator can affect the texture and make the caramels more difficult to slice cleanly.

Adjust the Flavor to Your Preference

If you love bold tropical flavors, add a small amount of passionfruit extract for extra intensity. You can also sprinkle flaky sea salt over the top for salted passionfruit caramels with a sweet-and-salty finish.

Cut with a Lightly Oiled Knife

For neat, professional-looking candy pieces, lightly grease your knife before slicing. Wiping the blade clean between cuts helps create smooth edges and makes wrapping the caramels easier.

Proper Storage Keeps Caramels Fresh

Store wrapped passionfruit caramels in an airtight container at room temperature for up to two weeks. Proper storage helps maintain their soft, chewy texture and prevents them from drying out.
