Notes
Double freezing is essential for perfect mozzarella sticks—this prevents cheese from leaking and ensures a clean, gooey cheese pull after frying.
Use low-moisture mozzarella for best results; it melts smoothly and holds its shape better than fresh mozzarella.
Cornstarch in the coating helps create an ultra-crispy crust that stays crunchy even after adding the Nashville hot sauce.
Mix panko with fine breadcrumbs to get the perfect balance of crunch and full coverage without gaps.
Maintain oil temperature between 345–350°F for evenly fried mozzarella sticks—too hot burns the coating, too cool causes soggy results.
Fry in small batches with space between each stick to prevent sticking and avoid dropping the oil temperature.
Let mozzarella sticks rest for 1–2 minutes after frying so the crust sets and the cheese finishes melting without bursting.
Brush on the Nashville hot sauce instead of tossing to keep the coating crispy while still delivering bold flavor.
Adjust cayenne pepper to control heat level—use less for a mild version or increase for extra spicy Nashville hot flavor.
Adding butter to the sauce creates a rich, authentic Nashville hot taste while helping the spices cling to the coating.
A splash of apple cider vinegar balances the heat and richness, giving the sauce a bright, crave-worthy finish.
Finish with a pinch of salt after coating to enhance flavor and bring out the savory, spicy notes.
Serve immediately for best texture, as fried mozzarella sticks are crispiest right after cooking.
Keep batches warm in a 200°F oven on a wire rack to maintain crispiness while finishing the rest.
For best reheating, use an oven or air fryer to restore crunch—avoid microwaving, which softens the coating.
