Ingredients

Mozzarella

  • 12 mozzarella string cheese sticks cut in half (24 pieces)
  • Pat completely dry

Breading

  • ¾ cup all-purpose flour
  • ¼ cup cornstarch
  • 2 large eggs
  • 1 tbsp milk
  • 1 cup panko breadcrumbs
  • ½ cup fine breadcrumbs

Seasoning (mix into breadcrumbs)

  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp onion powder
  • ½ tsp black pepper
  • ¼ tsp cayenne

Frying

  • Neutral oil vegetable or canola, enough for 2–3 inches depth

Nashville Hot Coating

  • 3 tbsp hot neutral oil
  • 3 tbsp unsalted butter melted
  • 1–1½ tbsp cayenne pepper
  • 1 tbsp brown sugar
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp chili powder
  • ½ tsp salt
  • 1 tsp apple cider vinegar
  • ½ tsp Dijon mustard

Instructions

Freeze the Cheese

  • Place mozzarella pieces on a tray and freeze for at least 2 hours.

Set Up Breading Station

  • Bowl 1: flour + cornstarch
  • Bowl 2: eggs + milk (whisked)
  • Bowl 3: breadcrumbs + all seasoning

First Coating

  • Dredge each piece in flour mixture
  • Dip into egg
  • Coat in breadcrumbs
  • Place on tray and freeze for 15 minutes

Second Coating

  • Dip coated sticks back into egg
  • Coat again in breadcrumbs
  • Press crumbs firmly
  • Freeze again for 45–60 minutes

Fry

  • Heat oil to 345–350°F (175°C)
  • Fry in batches with ~1 inch space between pieces
  • Cook for 80–90 seconds until deep golden
  • Remove when:

Rest

  • Let mozzarella sticks sit for 1–2 minutes after frying

Make Nashville Hot Sauce

  • In a bowl, mix cayenne, brown sugar, paprika, garlic powder, chili powder, and salt
  • Pour hot oil and melted butter over spices and whisk
  • Let cool for 1–2 minutes
  • Whisk in apple cider vinegar and Dijon mustard

Coat

  • Brush or spoon sauce lightly over mozzarella sticks
  • Flip and coat lightly again

Finish

  • Sprinkle lightly with fine salt
