  • Measuring cups and spoons
  • Instant-read thermometer
  • Large serving bowl for tossing meatballs in sauce

Ingredients

Chicken Meatballs

  • 1 ½ pounds ground chicken
  • ¾ cup panko breadcrumbs
  • 1 large egg
  • ⅜ cup finely grated yellow onion
  • 4 cloves garlic minced
  • 2 ½ tablespoons mayonnaise
  • 2 teaspoons pickle brine
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon hot sauce
  • 1 teaspoon kosher salt
  • ¾ teaspoon black pepper
  • ¾ teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon chicken bouillon powder
  • 1 tablespoon finely chopped parsley

Nashville Hot Sauce

  • 3 tablespoons unsalted butter divided
  • 2 tablespoons neutral oil
  • 1 tablespoon plus 1 teaspoon cayenne pepper
  • ¾ teaspoon smoked paprika
  • ½ teaspoon chili powder
  • ½ teaspoon garlic powder
  • 2 teaspoons dark brown sugar
  • ¾ teaspoon kosher salt
  • 1 tablespoon hot sauce
  • ½ teaspoon honey
  • ½ teaspoon apple cider vinegar
  • ¼ teaspoon black pepper

For Serving

  • Dill pickle chips
  • Ranch dressing
  • Soft white sandwich bread
  • Coleslaw optional

Instructions

  • Preheat oven to 395°F. Line a baking sheet with parchment paper.
  • In a large bowl, combine the ground chicken, panko breadcrumbs, egg, onion, garlic, mayonnaise, pickle brine, Worcestershire sauce, hot sauce, salt, black pepper, smoked paprika, onion powder, garlic powder, cayenne pepper, chicken bouillon powder, and parsley. Mix gently until just combined.
  • Form the mixture into approximately 20 meatballs about 1½ inches wide. Place evenly spaced on the prepared baking sheet.
  • Bake for 16–18 minutes or until the internal temperature reaches 165°F. Broil for 1 minute if desired for lightly crisp edges. Let rest for 2 minutes.
  • While the meatballs bake, prepare the Nashville hot sauce. In a small saucepan over low heat, melt 2 tablespoons butter with the oil.
  • Whisk in the cayenne pepper, smoked paprika, chili powder, garlic powder, brown sugar, salt, hot sauce, honey, apple cider vinegar, and black pepper. Cook gently for 30–60 seconds until smooth and fragrant. Do not scorch the spices.
  • Remove from heat and whisk in the remaining 1 tablespoon butter until glossy.
  • Transfer the warm meatballs to a large bowl. Pour the warm sauce over the meatballs and toss gently until evenly coated.
  • Let the meatballs rest for 1–2 minutes so the sauce adheres fully.
  • Serve immediately with dill pickle chips, ranch dressing, soft white bread, and optional coleslaw.

Notes

Use Ground Chicken With Some Dark Meat for Juicier Meatballs

Ground chicken breast alone can dry out quickly during baking. For the best texture and flavor, use a ground chicken blend that contains some dark meat. This helps create juicy Nashville hot chicken meatballs with a tender bite and richer flavor.

Do Not Overmix the Meatball Mixture

Mix the ingredients gently until just combined. Overmixing can make chicken meatballs dense and tough instead of soft and juicy. A light hand keeps the texture tender and restaurant-quality.

Let the Meatballs Rest Before Tossing in Sauce

Allow the baked meatballs to rest for about 2 minutes before coating them in the Nashville hot sauce. This helps the meatballs firm slightly and allows the spicy buttery sauce to cling better.

Adjust the Heat Level to Your Preference

These Nashville hot chicken meatballs are medium-hot to hot. For a milder version, reduce the cayenne pepper slightly. If you love extra spicy Nashville hot chicken flavor, increase the cayenne or drizzle additional hot sauce on top before serving.

Serve With Cooling Sides

Classic Nashville hot flavors pair perfectly with cooling ingredients like ranch dressing, coleslaw, and dill pickles. Soft white bread also helps balance the spice and absorbs the flavorful buttery sauce.

Great for Sliders, Bowls, or Appetizers

These spicy chicken meatballs are extremely versatile. Serve them as party appetizers, stuff them into slider buns, pile them onto rice bowls, or pair them with mac and cheese for a comforting Southern-inspired dinner.

The Sauce Tastes Better Warm

The Nashville hot sauce should stay warm and glossy when tossed with the meatballs. If the sauce cools too much, gently reheat it over low heat before coating the meatballs.

Make Ahead Friendly

You can bake the chicken meatballs ahead of time and refrigerate them for later. Reheat and toss in freshly warmed Nashville hot sauce right before serving for the best flavor and texture.
