Instructions

Make the Chocolate Espresso Cake Base

  • Preheat the oven to 350°F. Grease an 8-inch springform pan and line the bottom with parchment paper.
  • In a medium bowl, whisk together the flour, cocoa powder, sugar, baking soda, and salt.
  • Add the buttermilk, oil, sour cream, egg, and vanilla extract. Stir until mostly combined.
  • Slowly whisk in the hot espresso until smooth.
  • Pour the batter into the prepared pan.
  • Bake for 18 to 22 minutes or until a toothpick inserted into the center comes out with a few moist crumbs attached.
  • Cool the cake completely in the pan.

Make the Mocha Espresso Mousse

  • Place the chopped semi-sweet chocolate into a heatproof bowl.
  • Dissolve the espresso powder in the hot water and pour over the chocolate.
  • Heat 1/2 cup of the heavy cream until steaming but not boiling.
  • Pour the hot cream over the chocolate mixture and let sit for 1 minute.
  • Stir slowly until smooth and glossy. Cool for about 10 minutes until slightly warm.
  • In a large bowl, beat the softened cream cheese, powdered sugar, vanilla extract, and salt until smooth.
  • Beat in the cooled chocolate mixture until silky.
  • In a separate bowl, whip the remaining 1 cup cold heavy cream to medium peaks.
  • Fold one-third of the whipped cream into the chocolate mixture to lighten it.
  • Fold in the remaining whipped cream gently until fully combined.

Assemble the Cake

  • Spread the mousse evenly over the cooled cake base while still inside the springform pan.
  • Smooth the top with an offset spatula.
  • Cover and refrigerate for at least 6 hours or overnight.

Make the Soft Espresso Ganache

  • Place the chopped dark chocolate and espresso powder into a bowl.
  • Heat the heavy cream until steaming and pour over the chocolate.
  • Let sit for 1 minute.
  • Stir slowly until smooth and glossy.
  • Mix in the honey or corn syrup.
  • Cool for 5 to 10 minutes until slightly thickened but still pourable.
  • Pour over the chilled mousse layer and spread gently to the edges.
  • Refrigerate for 15 to 20 minutes before serving.

Notes

  • Use high-quality chocolate bars instead of chocolate chips for the smoothest and richest mocha espresso mousse cake texture. Chocolate chips contain stabilizers that can make the mousse less silky.
  • Dutch-process cocoa powder gives this chocolate espresso cake a deeper flavor and darker bakery-style appearance. Natural cocoa powder can be used, but the flavor will be slightly more acidic and less smooth.
  • Medium peaks are ideal when whipping the heavy cream for the mocha mousse. Overwhipped cream can create a dense or grainy mousse texture instead of a light airy filling.
  • Chilling the cake overnight creates the best flavor and texture. The mocha and espresso flavors deepen while the mousse becomes perfectly sliceable and creamy.
  • For stronger coffee flavor, lightly brush the chocolate cake base with 1 tablespoon of cooled espresso before spreading on the mousse layer. This creates an even richer coffeehouse-style dessert.
  • Allow the mocha espresso mousse cake to sit at room temperature for about 10 minutes before slicing for the smoothest and creamiest texture.
  • Run a sharp knife under hot water and wipe clean between slices for neat bakery-style presentation.
  • This make-ahead mocha mousse cake is perfect for holidays, birthdays, dinner parties, and special occasions because it stores beautifully in the refrigerator.
  • Store leftovers tightly covered in the refrigerator for up to 5 days. The flavor becomes even richer after the first day.
  • Individual slices can be frozen for up to 2 months. Thaw overnight in the refrigerator before serving for the best texture.
