Equipment

  • Baking sheet
  • Wire rack (for crispy wings)
  • Parchment paper or foil
  • Large mixing bowl
  • Small saucepan
  • Whisk or spoon
  • Tongs
  • Measuring cups and spoons

Ingredients

Wings

  • 2 lbs chicken wings
  • 1 tbsp baking powder aluminum-free
  • 1 tsp salt
  • ½ tsp black pepper

Mango Chili Lime Sauce

  • 1 cup mango purée
  • 1 tbsp honey
  • 2 tbsp lime juice
  • 1 tsp lime zest
  • 1 tbsp soy sauce
  • 1 tbsp butter divided
  • 2 cloves garlic finely grated
  • 1 tsp chili flakes
  • ½ tsp cayenne pepper
  • 1 tsp apple cider vinegar
  • ½ tsp fish sauce

Instructions

Prepare the Wings

  • Pat the chicken wings completely dry with paper towels. Toss them in a bowl with baking powder, salt, and black pepper until evenly coated.

Bake the Wings

  • Place the wings on a wire rack set over a baking sheet. Bake at 425°F (220°C) for 45 minutes, flipping halfway through, until crispy and golden brown.

Cook the Garlic

  • In a small saucepan over low heat, melt ½ tablespoon butter. Add the grated garlic and cook for 30–45 seconds, stirring constantly, until fragrant but not browned.

Make the Sauce

  • Add the mango purée, honey, lime juice, soy sauce, chili flakes, cayenne, apple cider vinegar, and fish sauce. Simmer for 4–7 minutes, stirring occasionally, until slightly thickened and glossy.

Finish the Sauce

  • Reduce heat to low and whisk in the remaining ½ tablespoon butter until smooth. Remove from heat and stir in lime zest.

Toss the Wings

  • Let the wings rest for 2 minutes after baking. Transfer to a large bowl and toss with the mango chili lime sauce until evenly coated.

Set the Glaze

  • Return the coated wings to the oven and bake for an additional 4 minutes at 425°F to set the glaze.

Serve

  • Serve immediately with an extra squeeze of fresh lime and a pinch of flaky salt if desired.

Notes

  • Crispy oven-baked wings tip: Always pat the chicken wings completely dry before seasoning. Removing excess moisture is the key to achieving crispy skin without frying.
  • Why baking powder works: Baking powder helps break down the skin’s surface, creating a light, crispy texture in the oven—perfect for baked chicken wings. Make sure to use aluminum-free baking powder for the best flavor.
  • Mango sauce balance: This mango chili lime sauce is designed to be sweet, tangy, and spicy. If your mango purée is very sweet, add an extra squeeze of lime juice to keep the flavor balanced.
  • Avoid bitter garlic: Cook the garlic gently in butter over low heat until just fragrant. Browning the garlic can make the sauce taste bitter and overpower the mango flavor.
  • Sauce consistency matters: Simmer the sauce until slightly thickened and glossy. It should lightly coat a spoon but still flow easily—this ensures it clings to the wings without becoming heavy.
  • Tossing technique: Always toss the wings in a large bowl, not in a hot pan. This prevents the sauce from separating and keeps the coating smooth and glossy.
  • Set the glaze: The final 4-minute bake after tossing helps the sauce stick to the wings and creates a slightly sticky, restaurant-style glaze. Don’t skip this step.
  • Adjusting spice level: For milder wings, reduce the cayenne or chili flakes. For extra heat, add a splash of hot sauce or increase the cayenne slightly.
  • Best serving tip: Finish with a squeeze of fresh lime juice and a pinch of flaky salt right before serving. This enhances the citrus flavor and makes the wings taste brighter and more balanced.
  • Make-ahead option: You can bake the wings ahead of time and reheat them at 425°F until crispy, then toss in freshly made sauce for best results.
