Lavender Lemonade Soda is a light, refreshing sparkling drink made with fresh lemon juice and a delicate lavender-infused simple syrup. Bright citrus balances gentle floral notes for a crisp, bubbly beverage that’s perfect for warm days, parties, or elegant non-alcoholic sipping.
In a small saucepan, combine water and sugar. Bring to a gentle simmer, stirring until sugar dissolves. Add lavender, remove from heat, cover, and steep for 10 minutes.
Strain & cool
Strain out the lavender and let the syrup cool completely. Chill for best flavor.
Assemble the soda
Fill glasses with ice. Add 2–3 tablespoons lavender syrup and 3 tablespoons lemon juice per glass.
Top with bubbles
Pour in sparkling water, stir gently, and adjust sweetness or lemon as desired.
Garnish & serve
Add lemon slices or a tiny lavender sprig and enjoy immediately.
Notes
Use culinary lavender only. Craft or decorative lavender can be bitter or unsafe for cooking.
Don’t over-steep the lavender. Ten minutes is ideal; longer steeping can make the syrup taste soapy or medicinal.
Adjust sweetness to taste. Start with 2 tablespoons lavender syrup per glass and add more if desired.
Fresh lemon juice is key. Bottled lemon juice dulls the bright flavor and overpowers the floral notes.
Chill everything first. Cold syrup, lemon juice, and sparkling water keep the soda crisp and prevent dilution.
Strain thoroughly. Even tiny lavender buds left in the syrup can intensify bitterness over time.
Storage: Lavender syrup keeps refrigerated for up to 2 weeks in an airtight container.
Make it ahead: Mix syrup and lemon juice in advance, then add sparkling water just before serving to preserve bubbles.
Flavor balance tip: If the drink tastes too floral, add extra lemon or soda rather than more sweetener.
