Ingredients

  • 1 cup granulated sugar

  • 2 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • ¾ tsp culinary lavender finely ground
  • ¾ cup powdered sugar for rolling

Instructions

Step 1: Mix dry ingredients

  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Step 2: Infuse sugar with lavender

  • In a large bowl, combine the granulated sugar and finely ground lavender. Rub together with your fingers until fragrant.

Step 3: Cream butter and sugar

  • Add the softened butter to the lavender sugar and beat for 2–3 minutes until light and slightly fluffy.

Step 4: Add wet ingredients

  • Mix in the eggs one at a time, then add the lemon zest, lemon juice, and vanilla extract. Mix until smooth.

Step 5: Combine

  • Gradually add the dry ingredients to the wet ingredients, mixing just until a soft dough forms.

Step 6: Chill

  • Cover and refrigerate the dough for at least 1 hour, or until firm enough to roll.

Step 7: Roll and coat

  • Scoop the dough into balls and roll each one generously in powdered sugar, coating thickly.

Notes
