  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • 1 tablespoon lime juice
  • 1 tablespoon oil

Beef Option

  • 1 pound ground beef 80/20 recommended
  • 1 tablespoon taco seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 2 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce

Vegetarian Black Bean Option

  • 1 can black beans drained and rinsed
  • 1 tablespoon olive oil
  • 1 garlic clove minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/4 teaspoon black pepper
  • Salt to taste
  • 1 tablespoon lime juice
  • Splash of broth or water as needed

Spicy Chili-Lime Drizzle

  • 2 tablespoons hot sauce
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • 1 teaspoon adobo sauce or minced chipotle in adobo
  • 1/2 teaspoon cumin
  • 1 teaspoon olive oil
  • Pinch of salt

Instructions

Make the Mexican Rice

  • Heat oil in a medium saucepan over medium heat.
  • Add the rinsed and well-drained rice. Toast for 4 to 5 minutes, stirring often, until lightly golden.
  • Stir in onion and cook until softened, about 3 minutes.
  • Add garlic, cumin, chili powder, smoked paprika, oregano, and sugar. Cook for 20 to 30 seconds until fragrant.
  • Pour in tomato sauce and warm broth. Stir in salt and add the bay leaf.
  • Bring to a gentle simmer, cover, and cook over low heat for 18 to 20 minutes.
  • Remove from heat and let rest covered for 5 minutes. Crack the lid slightly for 2 minutes, then fluff with a fork.
  • Remove bay leaf and stir in lime juice and chopped cilantro.

Prepare the Protein

    Chicken

    • Toss chicken with taco seasoning, garlic powder, onion powder, smoked paprika, black pepper, lime juice, and oil.
    • Heat a skillet over medium-high heat. Cook chicken in a single layer until browned and cooked through, about 6 to 8 minutes.
    • Let rest a few minutes before serving.

    Beef

    • Cook ground beef in a skillet over medium-high heat until browned.
    • Stir in taco seasoning, garlic powder, onion powder, black pepper, tomato paste, and Worcestershire sauce.
    • Cook another 2 to 3 minutes until flavorful and slightly caramelized.

    Black Beans

    • Heat olive oil in a skillet over medium heat.
    • Add garlic and cook for 30 seconds.
    • Stir in black beans, cumin, chili powder, black pepper, salt, lime juice, and a splash of broth or water.
    • Simmer 3 to 5 minutes until warmed and flavorful.

    Prepare the Toppings

    • Char the corn in a hot dry skillet until lightly blistered.
