Ingredients

For the Pork

  • 4 pounds pork shoulder or pork butt
  • 3 teaspoons kosher salt
  • 1 1/2 teaspoons black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cumin
  • Optional: 1/4 teaspoon smoked salt
  • 1 tablespoon olive oil
  • 1/2 cup low-sodium chicken broth

For the Guava BBQ Sauce

  • 1/2 cup guava jam or softened guava paste
  • 1 cup smoky barbecue sauce
  • 2 tablespoons ketchup
  • 1/4 cup apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon soy sauce
  • 2 teaspoons Dijon mustard
  • 1 tablespoon lime juice
  • 1 teaspoon fresh lime zest
  • 1 1/4 teaspoons chipotle powder
  • 1/2 teaspoon smoked paprika
  • 2 cloves garlic minced
  • 1 teaspoon brown sugar
  • Optional: 1 teaspoon blackstrap molasses
  • Optional: 1 teaspoon smoky chipotle hot sauce
  • Optional: 1/4 teaspoon liquid smoke

For the Slaw

  • 3 cups shredded green cabbage
  • 1/2 cup shredded purple cabbage
  • 1 small carrot julienned
  • 1 tablespoon mayonnaise
  • 1 1/2 tablespoons apple cider vinegar
  • 1 teaspoon sugar
  • 2 tablespoons thin sliced red onion
  • 1/4 teaspoon celery seed
  • Salt and black pepper to taste

For Serving

  • 8 brioche-style potato buns

Instructions

Step 1: Season the Pork

  • Pat the pork very dry with paper towels. In a small bowl, stir together the kosher salt, black pepper, smoked paprika, garlic powder, onion powder, cumin, and smoked salt if using. Rub the seasoning mixture thoroughly over the pork shoulder. Let the pork sit at room temperature for 30 minutes before cooking.

Step 2: Sear the Pork

  • Heat the olive oil in a large skillet over medium-high heat. Sear the pork on all sides until deeply browned, about 3–4 minutes per side. Transfer the pork to the slow cooker.

Step 3: Make the Guava BBQ Sauce

  • In a mixing bowl, whisk together the guava jam, barbecue sauce, ketchup, apple cider vinegar, Worcestershire sauce, soy sauce, Dijon mustard, lime juice, lime zest, chipotle powder, smoked paprika, garlic, and brown sugar. Add the molasses, chipotle hot sauce, or liquid smoke if desired.

Step 4: Slow Cook

  • Pour the chicken broth into the slow cooker. Add HALF of the guava BBQ sauce over the pork and reserve the remaining sauce for later. Cover and cook on LOW for 8–9 hours or HIGH for 5–6 hours until the pork shreds easily.

Step 5: Shred and Finish

  • Transfer the cooked pork to a cutting board and let it rest for 10 minutes. Shred the pork using forks or meat claws. Skim excess fat from the cooking liquid in the slow cooker. Return the shredded pork to the slow cooker and stir in the reserved sauce. Add only 2–4 tablespoons of cooking liquid if needed for moisture. Cook uncovered on LOW for 15–20 minutes until glossy and lightly sticky. Finish with a squeeze of fresh lime juice and adjust salt if needed.

Step 6: Make the Slaw

  • In a bowl, combine the green cabbage, purple cabbage, carrot, mayonnaise, apple cider vinegar, sugar, red onion, celery seed, salt, and pepper. Toss until lightly coated and chill until ready to serve.

Step 7: Toast and Assemble

  • Lightly butter the buns and toast until golden brown. Assemble the sandwiches by layering slaw onto the bottom buns followed by the pulled pork, pickles, red onion, and cheese or pineapple if desired. Serve immediately with fresh lime wedges.
