Notes

  • Banana ketchup flavor: Homemade banana ketchup is sweeter and milder than tomato ketchup and is essential for authentic Filipino flavor. Avoid substituting regular ketchup.
  • Calamansi juice: If calamansi isn’t available locally, bottled calamansi juice can be ordered online and works well. A lemon–lime mix is a suitable backup.
  • Don’t overmix: Gently combine the patty ingredients to keep the burgers juicy and tender.
  • Glazing tip: Brush the banana ketchup glaze during the final minute of cooking to prevent burning while still achieving a glossy finish.
  • Egg doneness: Sunny-side up or over-easy eggs are traditional and allow the yolk to act as a rich sauce.
  • Cheese option: American cheese melts best, but mild cheddar also pairs well with the sweet-savory flavors.
  • Make ahead: Banana ketchup can be prepared up to 2 weeks in advance and stored refrigerated in an airtight container.
  • Protein swaps: This recipe works well with ground chicken or pork; cook poultry thoroughly to 165°F.
