Ingredients

Chicken 65 Marinade

  • 250 g boneless chicken bite-sized
  • 1 tbsp ginger-garlic paste
  • 1 tsp Kashmiri chili powder
  • ½ tsp hot chili powder
  • ¼ tsp turmeric
  • ½ tsp garam masala
  • ½ tsp cumin powder
  • 1 tbsp cornflour
  • 1 tbsp rice flour
  • 1 tbsp thick yogurt
  • 1 tsp lemon juice
  • ¾ tsp salt
  • 1 egg white optional

Chicken 65 Tempering

  • 1 tbsp oil
  • 5 cloves garlic roughly chopped
  • 10–12 curry leaves
  • 2 green chilies slit
  • Finish seasoning:
  • ½ tsp chili powder
  • ½ tsp lemon juice or vinegar add off heat
  • ¼ tsp sugar

Fried Rice

  • 2 cups cooked basmati rice day-old, cold, separated
  • tbsp oil
  • Aromatics:
  • 4–5 cloves garlic finely chopped
  • 1 small onion or 2 shallots chopped
  • ½ cup bell peppers
  • 1 green chili optional
  • Seasoning:
  • 1 tbsp soy sauce
  • 1 tsp chili sauce
  • ½ tsp dark soy sauce
  • ¾ tsp vinegar
  • ½ tsp white pepper
  • Salt to taste
  • ¾ tsp sugar
  • Pinch MSG or ½ tsp chicken powder optional
  • 2 tbsp spring onions

Instructions

Marinate the Chicken

  • In a bowl, mix chicken with all marinade ingredients until evenly coated. Let rest for 20–30 minutes.

Fry the Chicken

  • Heat oil to 350–360°F (175–180°C). Fry chicken until golden and crisp. Remove and drain on a rack or paper towel.

Finish Chicken 65

  • Heat 1 tbsp oil in a pan. Add garlic, curry leaves, and green chilies. Sauté until fragrant.
  • Add fried chicken, chili powder, and sugar. Toss on high heat for about 1 minute.
  • Turn off heat and add lemon juice or vinegar. Toss briefly and set aside.

Make the Fried Rice

  • Heat a wok or large pan over high heat. Add oil.
  • Add garlic, then immediately add onion and green chili. Sauté briefly.
  • Add bell peppers and cook until slightly crisp.
  • Stir in soy sauce, chili sauce, dark soy sauce, vinegar, sugar, and white pepper.
  • Add rice and toss on high heat until heated through and grains are separated.

Combine

  • Add Chicken 65 (with its flavorful oil) to the rice. Toss for 1–2 minutes.
  • Finish with spring onions and serve hot.

Notes

✔ Use Cold, Day-Old Rice

For the best fried rice texture, always use cold, day-old basmati rice. Fresh rice holds too much moisture and will turn soft and clumpy instead of light and fluffy.

✔ Don’t Overcrowd the Chicken

Fry the chicken in batches to keep the oil temperature steady. Overcrowding lowers the heat and results in greasy, less crispy Chicken 65.

✔ Maintain Proper Oil Temperature
