Croissant Breakfast Sandwich with Eggs, Bacon, and Cheese

Instructions
Make the sauce
In a small bowl, mix mayonnaise, Dijon mustard, honey, hot sauce, lemon juice, garlic powder, and black pepper until smooth. Chill until ready to use.
Cook the bacon
Cook bacon until crisp. For best results, bake at 400°F for 15–20 minutes on a rack. Transfer to paper towels and let rest for 1 minute.
Toast the croissants
Reduce oven to 300°F. Place croissants cut-side up on a baking sheet and warm for 5 minutes, just until lightly crisp and heated through.
Melt the cheese
Place 1 slice of cheese on each bottom croissant half. Return to the oven for 60–90 seconds, just until melted.
Make the folded eggs
Whisk eggs, milk, salt, and pepper until smooth.
Melt butter in a nonstick skillet over low to medium-low heat.
Pour in eggs and let sit briefly, then gently push from edges toward center until a soft sheet forms and eggs are 90–95% set.
Fold into a rectangle and divide into 4 portions. Sprinkle with chives if using.
Assemble
On each bottom half, layer melted cheese, folded eggs, bacon, and avocado if using.
Spread a thin layer of sauce on the top croissant half. Close sandwich.
Serve
Serve immediately while warm.
