Ingredients

  • lbs chicken tenders or sliced chicken breast
  • 1 cup buttermilk or milk + 1 tbsp vinegar
  • 1 packet ranch seasoning mix or 2 tbsp homemade ranch seasoning
  • 1 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • ½ cup crushed cornflakes optional but extra crunchy
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • ½ tsp black pepper
  • ½ tsp salt
  • 2 eggs
  • Cooking spray or oil spray

Instructions

Marinate the chicken

  • Place chicken tenders in a bowl with buttermilk and half the ranch seasoning. Chill 20 minutes (or up to overnight).

Prepare coating stations

  • Bowl 1: flour + garlic powder + onion powder + paprika
  • Bowl 2: whisked eggs
  • Bowl 3: panko + cornflakes + remaining ranch seasoning

Coat the chicken

  • Remove chicken from marinade.
  • Dredge in flour → dip in egg → press into breadcrumb mixture.

Bake method

  • Place on rack over baking sheet. Spray with oil.
  • Bake at 425°F (220°C) for 15–20 minutes until crispy and cooked through.

Air fryer method

  • Cook at 400°F (200°C) for 10–14 minutes, flipping halfway.

Notes

  • For extra crispy ranch chicken tenders, use a wire rack on your baking sheet so hot air circulates underneath the chicken.
  • Let the coated tenders rest for 5 minutes before baking or air frying to help the breading stick and prevent it from falling off.
