Ingredients

  • 2 very ripe plantains almost black
  • 2 tablespoons all-purpose flour
  • 1/8 teaspoon salt
  • 0–1 tablespoon granulated sugar optional
  • Pinch of nutmeg or cinnamon optional
  • Oil for frying

Instructions

Mash the Plantains

  • Peel the plantains and mash them in a bowl until mostly smooth. Leave a few small chunks for better texture.

Mix the Batter

  • Add the flour, salt, and optional sugar and spice. Mix until a thick, sticky batter forms. The mixture should hold its shape when scooped and not be runny.

Heat the Oil

  • Pour about 1–2 inches of oil into a skillet and heat to 350°F.

Fry the Fritters

  • Drop heaping spoonfuls of batter into the hot oil. Do not flatten. Fry for 2–3 minutes per side, or until deep golden brown and crispy.

Drain and Serve

  • Transfer to paper towels to drain excess oil. Serve warm.

🍌 Use Very Ripe Plantains

For the best plantain fritters, choose plantains that are heavily speckled or nearly black. This ensures natural sweetness, a soft interior, and rich caramelized flavor. Underripe plantains will taste starchy and lack depth.

🥣 Get the Batter Consistency Right

The batter should be thick, sticky, and scoopable, not smooth or runny. Avoid adding extra liquid unless absolutely necessary, as too much moisture can cause the fritters to spread and absorb excess oil.

🔥 Control the Oil Temperature

Maintain an oil temperature of around 350°F for perfectly crispy plantain fritters. If the oil is too cool, the fritters will become greasy. If it’s too hot, they will brown too quickly and remain undercooked inside.
