  • ½ cup Italian breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • Salt & pepper to taste
  • Oil for frying

Buffalo sauce

  • ½ cup hot sauce Frank’s style
  • 3 tbsp unsalted butter
  • 1 tsp honey optional — balances heat
  • Pinch garlic powder

Instructions

1️⃣ Prep cheese

  • Cut mozzarella sticks in half if desired. Pat dry.

2️⃣ Bread

  • Set up stations:
  • Bowl 1: flour
  • Bowl 2: eggs + milk
  • Bowl 3: panko + Italian crumbs + spices
  • Dip:
  • flour → egg → crumbs → egg → crumbs again (double coat = no leaks).

3️⃣ Freeze (VERY important)

  • Place on tray and freeze at least 1 hour.

4️⃣ Fry

  • Heat oil to 350°F (175°C).
  • Fry 1–2 minutes until golden.
  • Remove immediately before cheese bursts.

5️⃣ Make buffalo sauce

  • Melt butter. Whisk in hot sauce, honey, garlic powder.

6️⃣ Toss

  • Gently toss fried mozzarella sticks in buffalo sauce or drizzle over.
