Equipment

  • Sharp knife or mandoline slicer (for very thin slices)
  • Cutting board
  • Mixing bowl
  • Large frying pan or deep pot (for frying)
  • Slotted spoon or spider strainer
  • Paper towels or wire rack (for draining)
  • Baking sheet (for baked version)
  • air fryer (optional)

Ingredients

  • 1 medium breadfruit firm, slightly underripe works best
  • Oil for frying vegetable, coconut, or avocado oil OR 2 tbsp oil for baking
  • ½ tsp salt

Optional seasonings:

  • Garlic powder
  • Chili powder
  • Paprika
  • Tajín
  • Sugar + cinnamon for sweet chips

Instructions

Step 1: Prep breadfruit

  • Peel breadfruit and remove the core.
  • Slice very thin using a knife or mandoline (thin slices = crisp chips).

Step 2: Soak (optional but recommended)

  • Soak slices in cold salted water for 10 minutes.
  • Pat completely dry.

Fry Method (crispiest)

  • Heat oil to ~350°F (175°C).
  • Fry chips in batches for 3–5 minutes until golden.
  • Drain on paper towels.
  • Season immediately.

Bake Method

  • Toss slices with oil and salt.
  • Spread in a single layer.
  • Bake at 400°F (200°C) for 18–25 minutes, flipping halfway.

Air Fryer Method

  • Lightly oil slices.
  • Air fry at 375°F for 10–15 minutes.
  • Shake halfway.

Notes

  • Choose firm, slightly underripe breadfruit for the crispiest chips — overly ripe breadfruit can turn soft instead of crunchy.
  • Slice the breadfruit very thin (mandoline recommended) to achieve a light, crisp texture similar to potato chips.
  • Soaking the slices in salted water helps remove excess starch and improves browning and crunch.
  • Frying creates the most authentic Caribbean-style breadfruit chips, while baking and air frying provide a lighter homemade snack option.
  • Breadfruit chips cook quickly and can burn fast, so watch closely during the final minutes.
  • Season immediately after cooking so spices stick well to the warm chips.
  • Store leftovers in an airtight container at room temperature for up to 2 days, though they are best eaten fresh for maximum crispiness.
  • Breadfruit chips pair beautifully with tropical dips like mango salsa, passionfruit aioli, coconut ranch, or spicy chili sauces — great for snack boards and island-inspired appetizers.
