Pasta
12ozfettuccine or linguine

Instructions
Cook the Pasta
Bring a large pot of salted water to a boil. Cook the fettuccine according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.
Season the Shrimp
In a bowl, toss the shrimp with olive oil, smoked paprika, garlic powder, salt, black pepper, chili powder (if using), and fresh lime juice until evenly coated.
Sauté the Shrimp
Heat a large skillet over medium-high heat. Add the seasoned shrimp in a single layer and cook for 2–3 minutes per side, or until pink and lightly caramelized. Remove shrimp from the skillet and set aside.
Start the Chipotle Alfredo Sauce
Reduce heat to medium. In the same skillet, melt the butter. Add minced garlic and sauté for 30 seconds until fragrant.
Add Chipotle Flavor
Stir in the finely chopped chipotle peppers and adobo sauce. Cook for 30 seconds to release their smoky flavor.
Create the Cream Sauce
Pour in the heavy cream and bring to a gentle simmer. Cook for 3–4 minutes, stirring occasionally, until slightly thickened.
Add Cheese & Seasoning
Whisk in Parmesan cheese, cream cheese, smoked paprika, onion powder, salt, and black pepper. Continue stirring until the sauce is smooth and creamy.
Add Vegetables
Stir in sun-dried tomatoes and fresh spinach. Cook until the spinach wilts and the sauce thickens. If the sauce becomes too thick, add a splash of reserved pasta water until desired consistency is reached.
Combine Everything
Add the cooked pasta and shrimp back into the skillet. Toss gently until everything is evenly coated in the chipotle Alfredo sauce.
Garnish & Serve
Top with fresh cilantro, additional Parmesan cheese, and optional lime zest. Serve immediately while hot and creamy.
Notes
Adjust the Heat Level: Chipotle peppers in adobo add smoky flavor and spice. For mild chipotle shrimp alfredo, use just 1 pepper and a small amount of adobo sauce. For a spicier shrimp alfredo pasta, add 2 peppers or a pinch of cayenne.Use Freshly Grated Parmesan: Freshly grated Parmesan melts smoothly into the creamy chipotle Alfredo sauce. Pre-shredded cheese may cause a grainy texture.Don’t Overcook the Shrimp: Shrimp cook quickly (2–3 minutes per side). Overcooking can make them rubbery. They should be pink, opaque, and lightly caramelized.Reserve Pasta Water: Starchy pasta water helps loosen and emulsify the sauce, creating a silky restaurant-style shrimp Alfredo consistency.Make It Even More Flavorful: For deeper flavor, try blackening the shrimp before adding them to the pasta. You can also stir in roasted red peppers or crispy bacon for extra richness.Storage & Reheating: Store leftover chipotle shrimp Alfredo in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop with a splash of milk or cream to restore the creamy texture.Freezing Tip: Cream-based sauces can separate when frozen, so this spicy shrimp Alfredo pasta is best enjoyed fresh.
