Equipment

  • Large skillet or sauté pan
  • Wooden spoon or silicone spatula
  • Whisk
  • Measuring cups and spoons
  • Pie dish (9-inch)
  • Knife (for venting crust)
  • Pastry brush (for egg wash)
  • Baking sheet (to catch drips)
  • Cutting board (for chopping bacon and vegetables)

Ingredients

  • 2 cups cooked shredded chicken rotisserie works great
  • 6 slices bacon cooked and chopped
  • 1 tbsp butter
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 cup frozen peas & carrots
  • ½ cup corn
  • 3 tbsp flour
  • cups chicken broth
  • ¾ cup heavy cream or milk
  • 2 tbsp ranch seasoning or 1 packet
  • ½ cup shredded cheddar
  • Salt & pepper to taste
  • 2 pie crusts top & bottom
  • 1 egg + 1 tbsp water egg wash

Instructions

  • Cook aromatics: Melt butter in a skillet. Cook onion 3–4 minutes, add garlic.
  • Make sauce: Stir in flour and cook 1 minute. Slowly whisk in broth and cream until thick.
  • Season: Add ranch seasoning, chicken, bacon, vegetables, and cheddar. Simmer until creamy.
  • Assemble: Place bottom crust in pie dish. Fill with mixture. Add top crust, seal edges, cut vents.
  • Egg wash: Brush top.
  • Bake: 400°F (200°C) for 30–35 minutes until golden.
  • Rest: Cool 10 minutes before slicing.

Notes

  • Use rotisserie chicken for convenience: Pre-cooked shredded chicken makes this Chicken Bacon Ranch Pot Pie faster and adds extra flavor.
  • Adjust ranch intensity: Ranch seasoning brands vary in salt and herb strength, so taste the filling before baking and adjust seasoning as needed.
  • Prevent a soggy crust: Bake the pot pie on the lower oven rack and allow the filling to thicken before assembling for the best flaky bottom crust.
  • Make it extra cheesy: Add mozzarella, Monterey Jack, or extra cheddar for a richer creamy chicken bacon ranch pot pie.
  • Vegetable swaps work well: Peas, carrots, corn, broccoli, mushrooms, or spinach all pair perfectly with the ranch chicken filling.
  • Great freezer meal: Assemble the pot pie, wrap tightly, and freeze for up to 2 months for an easy make-ahead family dinner.
  • Use puff pastry for variation: Puff pastry creates a lighter, flakier topping while still delivering classic comfort food texture.
  • Let it rest before slicing: Resting allows the creamy ranch sauce to set, preventing a runny pot pie and improving presentation for serving or food photography.
