Ingredients

Graham Cracker Crust

  • 1 ½ cups graham cracker crumbs
  • cup granulated sugar
  • ½ cup unsalted butter melted
  • ¼ teaspoon salt

Cotton Candy Cheesecake Filling

  • 16 oz cream cheese softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cotton candy extract
  • ½ cup sour cream
  • Pink gel food coloring
  • Blue gel food coloring

Instructions

Prepare the Pan

  • Preheat the oven to 325°F (163°C). Line a 9×9 inch baking pan with parchment paper, leaving some overhang on the sides so the cheesecake bars can be lifted out easily after chilling.

Make the Graham Cracker Crust

  • In a mixing bowl, stir together the graham cracker crumbs, granulated sugar, melted butter, and salt until the mixture resembles wet sand. Press the crust mixture firmly and evenly into the bottom of the prepared pan.
  • Bake the crust for 8 minutes. Remove the pan from the oven and allow the crust to cool slightly while preparing the filling.

Make the Cheesecake Filling

  • In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth and creamy. Add the eggs one at a time, mixing well after each addition.
  • Mix in the vanilla extract, cotton candy extract, and sour cream until the batter becomes smooth and fully combined.

Color the Cheesecake Batter

  • Divide the cheesecake batter evenly into three bowls. Leave one bowl plain white. Add pink gel food coloring to the second bowl and stir until evenly colored. Add blue gel food coloring to the third bowl and mix until the color is smooth.

Create the Cotton Candy Swirl

  • Drop spoonfuls of the pink, blue, and white cheesecake batter randomly across the cooled graham cracker crust. Continue layering the colors until all the batter has been added.
  • Use a toothpick or skewer to gently swirl the colors together to create a cotton candy swirl pattern. Do not overmix or the colors will blend together.

Bake the Cheesecake Bars

  • Place the pan in the oven and bake for 30–35 minutes, or until the center is mostly set with only a slight jiggle remaining.
  • Remove the pan from the oven and allow the cheesecake bars to cool at room temperature.

Chill the Cheesecake

  • Transfer the pan to the refrigerator and chill for at least 4 hours, or until the cheesecake is completely firm.

Slice and Serve

  • Lift the cheesecake out of the pan using the parchment paper overhang. Place it on a cutting board and slice into bars using a sharp knife. For clean slices, wipe the knife between cuts.
