Ingredients

Cookies

  • 2⅜ cups all-purpose flour

  • ¼ tsp baking powder
  • ½ tsp fine salt
  • Optional: ⅛ tsp citric acid
  • ¾ cup unsalted butter softened
  • ⅞ cup granulated sugar

  • 1 egg yolk
  • 1 tsp bubblegum extract
  • 1 tsp vanilla extract

  • Blue gel food coloring
  • ¼ cup vanilla chips or chopped white chocolate

Cotton Candy Glaze

  • ¾ cup powdered sugar
  • 1–2 tbsp milk
  • ¼ tsp vanilla extract

Topping

  • Cotton Candy Crunch
  • Optional edible glitter

Instructions

Prep

  • Preheat oven to 350°F (175°C).
  • Line baking sheets with parchment paper.

Cream Butter and Sugars

  • In a large bowl, beat together the butter, granulated sugar, brown sugar, and powdered sugar for 2–3 minutes until light and fluffy.

Add Wet Ingredients

  • Mix in the egg, egg yolk, bubblegum extract, and vanilla extract until fully combined.
  • Tint the dough pink, blue, or divide and swirl both colors together for a cotton candy effect.

Mix Dry Ingredients

  • In a separate bowl, whisk together the flour, cornstarch, baking soda, baking powder, salt, and optional citric acid.
  • Gradually mix the dry ingredients into the wet ingredients until just combined.
  • Fold in the vanilla chips or chopped white chocolate.
  • If the dough feels too soft or warm, chill for 20 minutes before baking.

Shape the Cookies

  • Scoop 1½–2 tablespoon portions of dough onto prepared baking sheets, spacing them about 2 inches apart.
  • Lightly flatten the tops.

Bake

  • Bake for 9–11 minutes, or until the edges are lightly set and the centers still look soft.
  • Do not overbake.
  • Allow cookies to cool on the baking sheet for 8 minutes before transferring to a wire rack.

Make the Glaze

  • Whisk together the powdered sugar, milk, and vanilla extract until smooth.
  • Drizzle lightly over cooled cookies.
  • Immediately top with Cotton Candy Crunch and optional edible glitter.

Notes

  • Bubblegum extract strengths can vary significantly by brand. For the best flavor balance, start with 1 teaspoon. Using too much may create an overpowering or artificial aftertaste.
  • Gel food coloring is highly recommended because it creates vibrant pastel colors without thinning the cookie dough. Liquid food coloring may make the dough too soft and increase spreading.
  • If your kitchen is warm or the dough feels sticky, chill the dough for 20–30 minutes before baking. This helps create thicker, bakery-style cotton candy bubblegum cookies with soft centers.
  • Do not overbake these cookies. The centers should still look slightly soft when removed from the oven. The cookies will continue setting as they cool on the baking sheet.
  • Cotton Candy Crunch is usually available online and adds the best carnival-style texture and appearance. Sprinkling it onto the glaze while it is still wet helps it adhere properly.
  • The vanilla chips or white chocolate add creamy sweetness and help balance the bright candy flavor without overpowering the bubblegum notes.
  • For the most vibrant cotton candy swirl effect, divide the dough into portions and tint each one separately before lightly swirling them together.
  • These cookies stay soft for several days when stored in an airtight container at room temperature.
  • Optional edible glitter gives the cookies a whimsical fairground-inspired bakery appearance that works beautifully for birthday parties, baby showers, and colorful dessert tables.
  • For a stronger cotton candy flavor profile, you can add a tiny pinch of citric acid to brighten the candy-like sweetness and create a more authentic carnival flavor.
