Equipment

  • 8x8-inch light-colored metal baking pan
  • Parchment paper
  • Large mixing bowl
  • Whisk
  • Rubber spatula
  • Measuring cups and spoons
  • wire cooling rack
  • Knife for slicing brownies

Ingredients

Brownie Batter

  • ½ cup unsalted butter
  • 2 tablespoons neutral oil
  • 1 cup granulated sugar
  • cup light brown sugar
  • 2 large eggs room temperature
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 1 tablespoon bourbon
  • cup unsweetened cocoa powder
  • ¾ teaspoon fine salt
  • ½ teaspoon espresso powder optional
  • cup all-purpose flour
  • ¾ cup semi-sweet chocolate chips
  • 1 cup toasted chopped pecans

Optional Bourbon Glaze

  • ¾ cup powdered sugar
  • 1 tablespoon bourbon
  • 1 teaspoon milk or cream

Instructions

Prepare the Pan

  • Preheat oven to 325°F. Line an 8x8-inch metal baking pan with parchment paper.

Mix the Wet Ingredients

  • Melt the butter in a large mixing bowl. Whisk in the oil, granulated sugar, and brown sugar while the mixture is still warm. Continue whisking for about 2 minutes until glossy and smooth.
  • Whisk in the eggs and egg yolk one at a time until fully incorporated. Add the vanilla extract and bourbon and whisk until smooth.

Add the Dry Ingredients

  • Sift in the cocoa powder, salt, espresso powder, and flour. Fold gently with a rubber spatula until nearly combined. Avoid overmixing the batter.

Add the Mix-Ins

  • Fold in the chocolate chips and toasted pecans evenly throughout the batter until fully distributed.

Bake the Brownies

  • Spread the batter evenly into the prepared pan. Bake for 33–38 minutes, or until the edges are set, the tops are shiny and crackled, and a toothpick inserted into the center comes out with moist fudgy crumbs.
  • Do not overbake, as the brownies will continue setting while cooling.

Cool and Slice

  • Allow the brownies to cool completely before slicing. For extra fudgy brownies and cleaner slices, refrigerate them for 30 minutes after cooling.

Optional Bourbon Glaze

  • Whisk together the powdered sugar, bourbon, and milk until smooth. Drizzle lightly over the cooled brownies before serving.

Notes

Why These Brownies Stay Fudgy

These Bourbon Pecan Brownies use a combination of butter and oil to create a rich, dense texture that stays soft for days. The butter adds flavor while the oil helps maintain moisture and chewiness without making the brownies greasy.

The Importance of Toasted Pecans

Toasting the pecans before adding them to the batter gives the brownies a deeper buttery flavor and a crunchier texture. Untoasted pecans can taste softer and less flavorful after baking.

How to Get Crackly Brownie Tops

Whisking the sugars into the warm butter mixture helps partially dissolve the sugar, which contributes to shiny crackly tops. Using room temperature eggs also improves the texture and appearance of the brownies.

Don’t Overbake the Brownies

For the best fudgy brownie texture, remove the brownies when the center still looks slightly soft. A toothpick inserted into the center should come out with moist fudgy crumbs rather than completely clean.
The brownies continue setting as they cool.

Bourbon Flavor Notes

The bourbon adds subtle caramel, vanilla, and oak notes that enhance the chocolate flavor without overpowering the brownies. The flavor becomes smoother and more balanced after the brownies cool completely.

Alcohol-Free Option

If you prefer to make these brownies without alcohol, replace the bourbon with strong brewed coffee or additional vanilla extract. Coffee deepens the chocolate flavor while maintaining richness.

Tips for Clean Brownie Slices

Allow the brownies to cool fully before slicing. For extra clean bakery-style cuts, refrigerate the brownies for 30 minutes after cooling and wipe the knife clean between slices.

Best Ways to Serve

These homemade bourbon pecan brownies are delicious served slightly warm, chilled, or topped with vanilla ice cream. They are perfect for holiday dessert trays, Christmas baking, Thanksgiving desserts, bake sales, and parties.

Storage Tips

Store the brownies in an airtight container at room temperature for up to 4 days or refrigerate for up to 1 week. The brownies become even fudgier after chilling.
