Ingredients

Coconut Simple Syrup

  • ½ cup granulated sugar
  • ½ cup water
  • ½ teaspoon coconut extract

Soda

  • 2 tablespoons coconut simple syrup
  • tablespoons blue curaçao syrup non-alcoholic
  • 1 tablespoon fresh lime juice
  • 1 to 1¼ cups chilled lemon-lime soda or sparkling water
  • Ice

Optional Caffeination (Choose one)

  • 25–50 mg liquid caffeine drops about ¼–½ teaspoon, brand-dependent
  • teaspoon powdered caffeine food-grade, unflavored
  • ¼ cup chilled matcha lemonade or green coffee extract

Optional Garnish

  • Lime wheel
  • Maraschino cherry
  • Toasted coconut flakes

Instructions

  • Combine the sugar and water in a small saucepan and heat over medium, stirring, until the sugar is completely dissolved.
  • Remove the saucepan from heat, stir in the coconut extract, and allow the syrup to cool completely.
  • Fill a tall 16-ounce glass with ice.
  • Pour 1 ounce of coconut simple syrup over the ice.
  • Add the blue curaçao syrup and fresh lime juice to the glass.
  • Top with chilled lemon-lime soda or sparkling water.
  • Add your chosen optional caffeinated ingredient, if using.
  • Gently stir until the drink is evenly mixed and lagoon-blue in color.
  • Garnish if desired and serve immediately.
