Instructions

Make the Banana Syrup

  • Add bananas, water, sugar, and lemon juice to a saucepan.
  • Bring to a gentle simmer over medium heat.
  • Simmer 10–12 minutes, stirring occasionally, until bananas are soft and syrupy.
  • Mash bananas lightly, then remove from heat.
  • Strain through a fine mesh sieve, pressing gently.
  • Cool completely. Refrigerate up to 7 days.

Make the Ginger Syrup

  • Combine ginger, water, and sugar in a saucepan.
  • Bring to a simmer over medium heat.
  • Simmer 10 minutes, then remove from heat.
  • Let steep 15 minutes for mild warmth (longer for stronger ginger).
  • Strain and cool. Refrigerate up to 2 weeks.

Assemble the Soda

  • Fill two glasses with ice.
  • In a small pitcher, mix:
  • Pineapple juice
  • Banana syrup
  • Ginger syrup
  • Taste and adjust sweetness or ginger level.
  • Top with sparkling water and gently stir once.
  • Garnish and serve immediately.
