  • Measuring spoons
  • measuring cups
  • Ladle
  • Wooden spoon or silicone spoon

Ingredients

Broth

  • 6 cups chicken broth or vegetable broth
  • ½ star anise
  • 4 slices fresh ginger
  • 1 dried red chili optional

Add-Ins

  • ½ cup shiitake mushrooms sliced
  • ½ cup soft tofu diced
  • ¼ cup corn kernels optional

Seasoning

  • 1 tablespoon soy sauce
  • ¼ teaspoon white pepper
  • salt to taste

Slurry

  • 1 tablespoon cornstarch
  • 2 tablespoons water

Eggs

  • 3 large eggs beaten

Finish

  • 1 teaspoon sesame oil
  • 2 tablespoons green onions sliced
  • optional few drops rice vinegar

Instructions

Infuse the Broth

  • Add chicken broth, star anise, ginger, and dried chili to a pot. Bring to a gentle simmer and cook for 10–15 minutes. Remove star anise and chili.

Cook the Mushrooms

  • Add sliced shiitake mushrooms and simmer for 5–6 minutes until softened.

Add Tofu and Corn

  • Stir in tofu and corn. Simmer for 1–2 minutes.

Season the Soup

  • Add soy sauce, white pepper, and salt to taste. Stir well.

Thicken the Soup

  • In a small bowl, mix cornstarch and water. Slowly pour into the soup while stirring gently. Simmer until slightly silky.

Create Egg Ribbons

  • Reduce heat to low. Slowly drizzle beaten eggs into the soup in a thin stream while gently stirring in one direction. Let eggs set briefly to form ribbons.

Finish and Serve

  • Turn off heat. Stir in sesame oil, green onions, and optional rice vinegar. Serve immediately.

Notes

  • For the best egg drop soup texture, drizzle the eggs slowly into gently simmering broth to create silky egg ribbons.
  • White pepper gives this aromatic egg drop soup its classic restaurant-style flavor and gentle warmth.
  • Use soft or silken tofu for the most delicate texture that blends perfectly with the egg ribbons.
  • Remove the star anise after simmering to prevent the broth from becoming too strong or overpowering.
  • Shiitake mushrooms add deep umami flavor, but button mushrooms can be substituted if needed.
  • For thicker egg drop soup, add an additional ½ tablespoon cornstarch slurry.
  • For a lighter, clearer egg drop soup, reduce or skip the cornstarch slurry entirely.
  • Stir the soup gently after adding eggs to keep the ribbons intact and silky.
  • Add sesame oil after turning off the heat to preserve its aroma and flavor.
  • A few drops of rice vinegar at the end brighten the broth and balance the savory flavors.
  • This ginger egg drop soup can be made vegetarian by using vegetable broth instead of chicken broth.
  • Leftover egg drop soup may thicken in the refrigerator; simply add a splash of broth when reheating.
