Equipment

  • Mixing bowls
  • Hand mixer or stand mixer
  • measuring cups
  • Measuring spoons
  • Rubber spatula
  • cookie scoop
  • Baking sheet
  • Parchment paper or silicone baking mat
  • Cooling rack

Ingredients

  • ½ cup unsalted butter softened
  • ½ cup brown sugar packed
  • ¼ cup granulated sugar
  • ¼ cup apple butter thick
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup + 2 tablespoons all-purpose flour
  • 1 cup old-fashioned oats
  • ½ teaspoon baking soda
  • ¾ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ teaspoon salt

Instructions

Step 1: Cream Butter and Sugars

  • In a large bowl, beat butter, brown sugar, and granulated sugar until light and fluffy.

Step 2: Add Wet Ingredients

  • Mix in apple butter, egg, and vanilla extract until smooth and combined.

Step 3: Combine Dry Ingredients

  • In a separate bowl, whisk together flour, oats, baking soda, cinnamon, nutmeg, and salt.

Step 4: Make the Dough

  • Gradually mix dry ingredients into wet ingredients until just combined. Do not overmix.

Step 5: Chill Dough

  • Cover and chill dough for 30 minutes to prevent spreading.

Step 6: Bake

  • Preheat oven to 350°F.
  • Scoop dough into large cookie balls and place on lined baking sheet.
  • Bake for 10–12 minutes until edges are set and centers are soft.

Step 7: Cool

  • Allow cookies to cool on the baking sheet for 5 minutes before transferring.

Notes

  • Use thick apple butter for the best texture. Runny apple butter can cause cookies to spread too much during baking.
  • Chilling the dough is important and helps create thick, bakery-style apple butter oatmeal cookies with soft centers.
  • Do not overbake. The cookies should look slightly underdone in the center when removed from the oven. They will firm up as they cool.
  • Old-fashioned oats provide the best chewy texture. Quick oats will create a softer, more cake-like cookie.
  • For stronger apple flavor, add a light apple butter swirl on top of each dough ball before baking.
  • Slightly flattening the dough balls helps the cookies bake evenly without spreading too thin.
  • If cookies spread too much, chill the dough longer or add 1 tablespoon flour.
  • If cookies are too thick, gently flatten the dough before baking.
  • Store apple butter oatmeal cookies in an airtight container to keep them soft and chewy.
